Robus coreanus Miquel is a small berry fruit used for Korean black raspberry (KBR) wine‐making. Twelve different yeast strains were investigated by laboratory‐scale fermentation to develop a wine with a high flavour quality. Volatile aroma compounds from the wines were analysed using headspace–solid phase microextraction–gas chromatography–mass spectrometry and sensory evaluation was performed to evaluate the flavour characteristics. The volatile aroma compounds that mostly contributed to the flavour of KBR wines were those related to fruity (esters) and floral (terpenes) aromas. Fifteen out of the 67 identified volatile compounds showed higher odour activity values than other compounds in the wines, and these compounds were considered as important contributors to the final aromas of the wine. Additionally, the KBR wine fermented by the M1 yeast strain had the highest sensory preference because of higher fruity and floral aroma characters compared with other wines. In addition to the M1 strain, the other yeast strains that produced favourable sensory characteristics included Enoferm CSM, Uvaferm VRB, Lalvin ICV GRE, Lalvin ICV Opale and LevureSeche Active. Of these strains, the M1 strain produced a particularly excellent black raspberry wine, and thus could be applied for further large‐scale production of black raspberry wines. It is also expected that this work will expedite research on the production of high‐quality black raspberry wines with beneficial physicochemical properties, functionality and good sensory characteristics. The dependence of wine sensory attributes on the water status of the source vines was determined following vineyard irrigation treatments which included early and late season water deficits and continually irrigated vines. In both seasons, the experimental wines made from the different irrigation treatments did not differ in the concentration of residual sugar or ethanol, titratable acidity, or pH. The concentrations of anthocyanins and total soluble phenolics in the wines were greater from water deficit treatments than from continually irrigated vines. For sensory evaluation, a novel protocol for paired comparisons was developed to test separately for differences in wine appearance, flavour, taste and aroma; differences were detected for each wine comparison. In both seasons, continually irrigated wine differed from early and late season water deficit wine, and early season water deficit wine differed from late season water deficit wine in appearance, flavour, taste and aroma. The sensory differences were not attributable to differences in vine yield or fruit maturity. When professional wine tasters were sampled using similar tests, a majority was able to detect visual but not flavour differences between a selected pair of wines. It is concluded that, where vine water status can be altered, irrigation offers a means to manipulate wine sensory characteristics in the vineyard.  相似文献

The effects of three different commercially available glycosidase enzymes on the volatile compounds in KBR wines were investigated with large‐scale fermentation to develop a high‐flavour‐quality wine. Volatile aroma compounds from the wines were analysed using headspace‐solid phase micro‐extraction‐gas chromatography–mass spectrometry (HS‐SPME‐GC–MS) and sensory evaluations were performed to evaluate the flavour characteristics. KBR wines treated with commercial enzymes yielded high concentrations of terpenes and esters compared with the control wine because the odourless non‐volatile glycosides in KBR wines were converted to their corresponding free forms by the enzymes. HS‐SPME‐GC–MS‐SIM analysis showed that the primary monoterpene compounds in KBR wines treated by the enzymes were myrtenol, linalool, citronellol and a significant quantity of compounds such as 2‐phenyl ethanol and ethyl benzoate, which contributed to the flavour of KBR wine, as determined by GC‐FID. KBR wines treated with the enzymes exhibited different sensory characteristics from the control wine owing to higher intensity of floral and fruity aromas. Yeast and bacterial modulation of wine aroma and flavour   总被引:3,自引:0,他引:3  
Wine is a highly complex mixture of compounds which largely define its appearance, aroma, flavour and mouth‐feel properties. The compounds responsible for those attributes have been derived in turn from three major sources, viz. grapes, microbes and, when used, wood (most commonly, oak). The grape‐derived compounds provide varietal distinction in addition to giving wine its basic structure. Thus, the floral monoterpenes largely define Muscat‐related wines and the fruity volatile thiols define Sauvignon‐related wines; the grape acids and tannins, together with alcohol, contribute the palate and mouth‐feel properties. Yeast fermentation of sugars not only produces ethanol and carbon dioxide but a range of minor but sensorially important volatile metabolites which gives wine its vinous character. These volatile metabolites, which comprise esters, higher alcohols, carbonyls, volatile fatty acids and sulfur compounds, are derived from sugar and amino acid metabolism. The malolactic fermentation, when needed, not only provides deacidification, but can enhance the flavour profile. The aroma and flavour profile of wine is the result of an almost infinite number of variations in production, whether in the vineyard or the winery. In addition to the obvious, such as the grapes selected, the winemaker employs a variety of techniques and tools to produce wines with specific flavour profiles. One of these tools is the choice of microorganism to conduct fermentation. During alcoholic fermentation, the wine yeast Saccharomyces cerevisiae brings forth the major changes between grape must and wine: modifying aroma, flavour, mouth‐feel, colour and chemical complexity. The wine bacterium Oenococcus oeni adds its contribution to wines that undergo malolactic fermentation. Thus flavour‐active yeasts and bacterial strains can produce desirable sensory results by helping to extract compounds from the solids in grape must, by modifying grape‐derived molecules and by producing flavour‐active metabolites. This article reviews some of the most important flavour compounds found in wine, and their microbiological origin.  相似文献

Background and Aims: Wines made from grapes harvested from vineyards exposed to bushfire smoke can exhibit objectionable ‘smoky’, ‘cold ash’, ‘medicinal’ and ‘ashy’ aroma and flavour characters. This study evaluated a combined reverse osmosis and solid phase adsorption process as a potential amelioration method for the treatment of smoke‐tainted wines. Methods and Results: Smoke‐tainted wines were treated using either pilot or commercial scale reverse osmosis systems and the chemical composition and sensory properties of wine compared before and after treatment. The concentrations of smoke‐derived volatile phenols, including marker compounds, guaiacol and 4‐methylguaiacol, decreased significantly with treatment. As a consequence, diminished smoke‐related sensory attributes enabled treated wines to be readily differentiated from untreated wines. However, the taint was found to slowly return with time, likely because of hydrolysis of glycoconjugate precursors, which were not removed during the treatment process. Conclusions: Reverse osmosis and solid phase adsorption reduced the concentration of smoked‐derived volatile phenols and improved the sensory attributes of smoke‐tainted wines. Significance of the Study: This is the first study to evaluate the amelioration of smoke taint in wine using reverse osmosis and solid phase adsorption.  相似文献

蛇龙珠营养系干红葡萄酒中的挥发性风味物质   总被引:2,自引:0,他引:2  
确定蛇龙珠不同营养系葡萄酒中挥发性风味物质的差异及对其感官品质的影响。利用顶空固相微萃取和气相色谱-质谱联用技术对8 个蛇龙珠营养系干红葡萄酒中50 种主要挥发性成分进行定性和定量检测,采用香气活性值(odor activity value,OAV)、单因素方差分析和主成分分析对测定数据进行处理分析。结果显示:在蛇龙珠干红葡萄酒中β-大马酮等24 种化合物OAV不小于1,对葡萄酒香气具有贡献。乙酸乙酯等12 种化合物可较好实现对8 个蛇龙珠营养系干红葡萄酒的判别分类,E-01、E-02、E-04、E-05营养系间存在明显差异,而E-06、E-07和E-08之间差异很小。结合感官品评结果发现,γ-壬内酯和里哪醇对提高蛇龙珠干红葡萄酒感官品质具有较大贡献,但含量需控制在一定范围内;而壬醛和4-乙基苯酚含量较高会显著降低葡萄酒感官品质,此外,β-大马酮、乙酸乙酯、癸酸乙酯等含量较高也会对葡萄酒的感官品质带来负面影响。蛇龙珠干红葡萄酒的香气特点不是由某个或某类香气成分产生的,是各种香气成分平衡作用的结果。  相似文献

Discovery, characterisation and use of novel yeast strains for winemaking is increasingly regarded as a way for improving quality and to provide variation, including subtle characteristic differences in fine wines. The objective of this work was to evaluate the use of a native apiculate strain, selected from grapes, Hanseniaspora vineae (H. vineae) 02/5A. Fermentations were done in triplicate, working with 225 L oak barrels, using a Chardonnay grape must. Three yeast fermentation strategies were compared: conventional inoculation with a commercial Saccharomyces cerevisiae strain, ALG 804, sequential inoculation with H. vineae and then strain ALG 804 and spontaneous fermentation. Yeast strain identification was performed during fermentation, in which the apiculate strain was found to be active, until 9% of alcohol in volume, for the co-fermentation and the spontaneous fermentation was completed by three native S. cerevisiae strains. Basic winemaking parameters and some key chemical analysis, such as concentration of glycerol, biogenic amines, organic acids, and aroma compounds were analysed. Sensory analysis was done using a trained panel and further evaluated with professional winemakers. Sequential inoculation with H. vineae followed by S. cerevisiae resulted in relatively dry wines, with increased aroma and flavour diversity compared with wines resulting from inoculation with S. cerevisiae alone. Wines produced from sequential inoculations were considered, by a winemaker’s panel, to have an increased palate length and body. Characteristics of wines derived from sequential inoculation could be explained due to significant increases in glycerol and acetyl and ethyl ester flavour compounds and relative decreases in alcohols and fatty acids. Aroma sensory analysis of wine character and flavour, attributed to winemaking using H. vineae, indicated a significant increase in fruit intensity described as banana, pear, apple, citric fruits and guava. GC analysis of the relative accumulation of 23 compounds to significantly different concentrations for the three fermentation strategies is discussed in relation to aroma compound composition.  相似文献

分别对野生猕猴桃进行清汁、混汁和带皮发酵处理,采用顶空固相微萃取技术对不同酿造工艺野生猕猴桃酒的香气进行富集,用气相色谱-质谱联用技术对其进行定性定量分析,结合酒的基本理化指标和感官评价比较不同工艺处理野生猕猴桃酒的品质。结果表明:混汁发酵和带皮发酵可降低猕猴桃酒的总酸及挥发酸质量浓度,提高pH值,减少VC损失;带皮发酵的香气物质总量显著高于清汁和混汁发酵(P<0.05),且酒中的酯类、萜烯类、酮类物质质量浓度相对较高,但酸类物质质量浓度显著降低(P<0.05);不同工艺处理酒中特征香气有所差异,其感官香气也各具特色;带皮发酵酒的香气评分较高,猕猴桃品质特征香气突出;且在口感质量、口感浓度、口感纯正度、香气质量、香气浓度、香气纯正度及整体平衡性方面均优于清汁发酵和混汁发酵。因此,带皮发酵工艺可一定程度提高野生猕猴桃酒的品质。  相似文献

Comparative sensory evaluation of wines produced by immobilized cells of Uvaferme 299 on dried raisin berries and free cells using the Saint Denis grape variety and of commercial Greek products (‘Biblia Chora’ rosé wine produced from the Syrah grape variety, ‘Palivos’ and ‘Strofilia’ rosé wines both produced from the Agiorgitiko grape variety) was carried out. Sensory evaluation was conducted twice by 11 tasters previously trained and a method for panel validation was proposed. Subsequently, the wines were evaluated for their aroma intension, aroma complexity, aroma elegance and overall quality. Duncan's multiple range test clearly showed that there were statistically significant differences between wines produced using different grape varieties and fermentation conditions. Linear regression analysis of the results was performed in order to investigate which sensory parameter had a significant effect on the overall quality and it revealed that only aroma elegance affected significantly the overall quality. Wine produced by immobilized cells scored a statistically higher value for its overall quality than the wine produced by free cells. Finally, discriminant sensory evaluation revealed a gooseberry, cherry, mint aroma for ‘Biblia Chora’ wine and a citrus, rose aroma for ‘Strofilia’ and ‘Palivos’ wines. 选用陕西地区的鲜食葡萄品种户太八号、夏黑和酿酒品种爱格丽、嘉年华、玫瑰香为原料,酿制小容器起泡葡萄酒,并对不同品种葡萄酿造的起泡葡萄酒进行酚类物质、香气物质及感官指标进行定量描述分析(QDA)比较。结果表明:不同品种葡萄果实及起泡葡萄酒总酚含量存在显著差异(P<0.05),鲜食葡萄品种的总酚含量高于酿酒葡萄品种,夏黑葡萄果实中的总酚含量最高,为(97.95±2.93) mg/g,5种起泡葡萄酒的基本指标均符合国家标准,其中酿酒品种中嘉年华及鲜食品种里户太八号起泡葡萄酒的酚类物质含量较高;5种起泡葡萄酒共检测出香气物质50种,其中玫瑰香起泡葡萄酒香气物质种类最多(33种);QDA分析结果表明,爱格丽及夏黑起泡葡萄酒感官品质较佳,分别得分75.99分和81.80分。  相似文献

Sensory attribute evolution in bottled young red wines from Rioja Alavesa   总被引:1,自引:0,他引:1  
The evolution of 19 bottled young red wines from Rioja Alavesa was studied through 9 months. Twenty-four sensory attributes (including appearance, aroma, flavor, taste and mouth-feel) were evaluated at four times (at 1, 3, 5 and 9 months after bottling) by a ten-member panel. Fifteen physicochemical parameters were also analyzed at these four times. Effect of winemaking process (carbonic maceration vs. destemming), and grape variety (only Tempranillo vs. Tempranillo with a white variety) on wine evolution was considered too. Data were analyzed by analysis of variance. Nine sensory attributes changed significantly through the time: red berry aroma and flavor, body, balance, purple hue and color intensity increased, whereas alcoholic aroma and flavor, and astringency decreased. Almost all the physicochemical parameters changed significantly through the time. The winemaking process and the addition of white grapes did not influence sensory and physicochemical evolution.  相似文献

The aim of this study was to determine how changes in grape composition brought about by artificial shading (sunlight exclusion) influence wine properties including colour, flavonoid composition and sensory attributes. Prior to flowering, bunches of Shiraz grapes were enclosed in boxes designed to eliminate light without altering bunch temperature and humidity. This artificial bunch shading had little effect on berry ripening and accumulation of sugar but at harvest the shaded bunches had smaller berries and higher seed weight, juice pH and titratable acidity. The amount of anthocyanins in the fruit was not changed significantly but anthocyanin composition in the shaded berries was shifted towards dioxygenated anthocyanins (the glucosides of cyanidin and peonidin derivatives). Shaded fruit had increased seed tannins and decreased skin tannins but the largest relative change in flavonoids was a marked decrease in flavonols in the shaded fruit, similar to previous studies. Wines made from shaded fruit had lower wine colour density, total phenolics, anthocyanins and tannins when the wine was bottled and after ageing for up to three years. Analysis of potential flavour compounds following acid hydrolysis indicated that the wines made from shaded fruit had decreased levels of glycosides of β-damascenone and 1,1,6-trimethyl-1,2-dihydronaphthalene (TDN). Sensory analysis of the wines indicated no significant difference in aroma attributes but the wines made from shaded fruit were rated lower for astringency, fruit flavour and flavour persistence in-mouth sensory attributes. The results indicate that extreme shading of Shiraz fruit can decrease wine colour, anthocyanins and tannins as well as altering sensory attributes.  相似文献
