Research advances on chitin from Antarctic krill

Antarctic Krill, as an important marine living resource, has attracted extensive attention. Due to the huge cost pressure of Antarctic krill industry, it is urgent for the Antarctic krill to be fully developed and deeply utilized. As one of the important components of Antarctic krill, chitin from Antarctic krill has attracted much attention in different fields due to its excellent functional properties and its unique application potential due to its huge biological resources. In this paper, the structural characteristics, physical and chemical properties, preparation methods, biological activities and applications of Antarctic krill chitin are reviewed in order to provide references for the further development and utilization and promote the comprehensive and sustainable development of Antarctic krill industry.
