摘    要:大豆异黄酮系为具有多种生物活性大豆活性成分。该文在介绍大豆异黄酮组成、结构、消化吸收基础上,对近年来利用微生物转化提高豆浆、豆腐、豆瓣酱等大豆制品大豆异黄酮生物活性相关研究进行综述。
