摘    要:介绍了勃聚糖的分布和一般性质,以及壳聚糖在果汁澄清上的运用,指出作为一种新型澄清剂,壳聚糖具有不少优良的特性,可以替代传统的澄清处理。

Abstract:The distribution and general properties of chitosan, and the application of chitosan to the clarification of fruit juices are described. As a new clarifying agent with many satisfactory characteristics, chitosan can be used as an attractive alternative to conventional clarifying process.
