以皮尔森麦芽、特种麦芽和酒花为原料,选用上面艾尔酵母BE-256经二次发酵,酿制高酒精度的修道院强烈艾尔啤酒。 以感 官评分为评价指标,通过单因素试验研究发酵温度、加糖量及酒花干投量对啤酒感官品质的影响,在此基础上以感官评分为响应值, 建立响应面模型优化啤酒酿造的工艺条件。 结果表明,修道院强烈艾尔啤酒的最佳酿造工艺条件为发酵温度20 ℃,加糖量3.04%,酒 花干投量0.42 g/L。 在此优化条件下,啤酒的感官评分为92.8分,外观呈琥珀色,泡沫丰富细腻,香气宜人,酒体醇厚,杀口力强。 相似文献

以大麦芽、青稞为原料,制备青稞精酿啤酒,以感官评分为响应值,通过单因素试验和响应面法对青稞精酿啤酒酿造工艺进行优化,并对青稞精酿啤酒的基本指标和生物活性物质进行分析。结果表明,青稞精酿啤酒的最佳酿造工艺条件为:酒花添加量2 g/L,初始麦汁浓度14 °P,主发酵温度12 ℃。在此优化条件下,青稞精酿啤酒的感官评分为86.7分,外观鲜亮金黄,泡沫细腻,香气丰富,杀口力强。青稞精酿啤酒的酒精度为5.28%vol,β-葡聚糖、总黄酮和γ-氨基丁酸含量分别为(124.26±9.74)mg/L、(138.65±2.07)mg/L和(81.79±6.37)mg/L。 相似文献

以加麦麦芽,燕麦片,小麦及酒花为主要原料,选用Londonale酵母,在发酵过程中进行酒花干投,酿制浑浊度较高的IPA。以感官评分为主要评价指标,通过对燕麦比例、酵母添加量、酒花添加量等单因素试验,研究其对浑浊IPA感官品质的影响,并建立相应的响应面模型优化浑浊IPA的酿造工艺条件。结果表明:酒花添加量对浑浊IPA的影响最大,浑浊IPA最佳工艺参数为燕麦比例15%,发酵温度20℃,封罐后酒花干投量6 g/L。使用此最佳工艺参数得到的啤酒的感官评分为91.5分,颜色成琥珀色,酒体浑浊,突出浓郁的热带水果味,而苦度普遍比较收敛,易于入口,酒体醇厚。 相似文献

为了优化荔枝水果啤酒酿造工艺,采用单因素试验设计,考察了原麦汁浓度、荔枝果浆添加量和啤酒花添加量对荔枝啤酒的发酵特性和感官指标的影响;基于单因素试验结果,以感官评价分数为响应指标,采用Box-Behnken试验设计和响应面分析对工艺参数进行优化。结果表明,原麦汁浓度、荔枝果浆添加量对荔枝啤酒的发酵度、酒精度、泡持性和苦度影响显著(p<0.05);啤酒花添加量对荔枝啤酒的泡持性和苦度影响显著(p<0.05);优化参数条件范围为原麦汁浓度9~11 oP,荔枝果浆11%(V/V)~15%(V/V),啤酒花0.39~0.44 g/L,预测荔枝啤酒的感官分数在78.00分以上。选择原麦汁浓度10 oP,荔枝果浆15%(V/V),啤酒花0.40 g/L的条件进行验证实验,感官评价平均分数为78.10分,与预测值相符。在啤酒酿造工艺中添加荔枝,可以丰富水果啤酒品类,赋予其荔枝的特征风味。 相似文献

该研究以大麦芽、小麦为主要原料,葡萄籽、百香果为主要辅料酿制啤酒,利用单因素试验考察混合主料(大麦芽、小麦与水)料液比、萨兹香型酒花添加量、混合辅料(葡萄籽、百香果与麦汁)料液比、初始pH值、酵母添加量和主发酵温度等因素对葡萄籽百香果啤酒感官评分的影响,并通过响应面优化葡萄籽百香果啤酒发酵工艺条件。结果表明,最优葡萄籽百香果啤酒发酵工艺条件为:大麦芽、小麦与水料液比1.0∶4.0(kg∶L),初始pH值5.0,萨兹香型酒花添加量0.6 g/L,百香果汁添加量80 g/L,葡萄籽、百香果与麦汁料液比2.0∶1.0(kg∶L),酵母添加量0.10%,主发酵温度21 ℃。在此优化发酵工艺条件下,葡萄籽百香果啤酒感官评分为88.44分,酿制的啤酒香气丰富有层次感,麦香突出,是一款理想的烈性啤酒。 相似文献

以大麦芽、小米、赤小豆、燕麦为谷物原料,酵母菌和乳酸菌为发酵菌种混合发酵制备谷物发酵饮料。以感官评分为评价指标,先通过单因素试验研究了乳酸菌接种量、发酵温度等5个因素对谷物发酵饮料品质的影响,筛选出了乳酸菌接种量、发酵温度、酵母接种量三个主要影响因素,再通过响应面法进行了工艺优化。在优化其工艺条件的基础上,对谷物发酵液进行了调配。结果表明,最佳制备工艺为发酵温度38 ℃,乳酸菌接种量3.3%,酵母菌接种量0.7%,原麦汁浓度8 °P。添加发酵液50%,三氯蔗糖0.025%,槐花蜜5%制得的谷物发酵饮料感官评分为97分,酒精度为0.12%vol,接受度较高,可推广应用。 相似文献

Corn has been widely used in traditionally fermented Mexican beverages. We recently developed a process to prepare beers using 100% pigmented corn varieties that provide polyphenols and anthocyanins with antioxidant properties. Moreover, new styles could be created when modifying the process conditions and ingredients. Thus, we explored the effect of caramel malt addition and different amounts of hops and guajillo chili, generating several styles of blue corn malt beers (BCMB). The objective was to evaluate these effects on selected chemical parameters and antioxidant properties at three different stages of the brewing process. To achieve this, base and caramel malts were obtained and used to develop eight styles of BCMB, using different concentrations of chili and hops, using an ale fermentation process. Eleven chemical properties were determined in the wort, green and mature beer of the eight styles of BCMB. Low‐alcohol beers were obtained and the values of total reducing sugars, alcohol, pH, total acidity, bitterness units and iso‐α ‐acids during the stages of the process were similar to barley beers. Additionally, anthocyanin concentration, polyphenols and antioxidant capacity decreased through the process stages. The interaction of the ingredients produced effects on the chemical composition and antioxidant activity in mature beers. After statistical analysis, by both univariate ANOVA and multivariate methods (hierarchical cluster analysis and principal component analysis), a higher concentration of anthocyanins and ABTS antioxidant capacity was founds in two beer styles that were formulated with 85% base malt and 15% caramel malt.
