淀粉为基质的脂肪替代品对无脂冰淇淋特性的影响   总被引:1,自引:0,他引:1  
研究了淀粉为基质的脂肪替代品对无脂冰淇淋的膨胀率、抗融化能力、硬度、粘弹性和感官指标的影响,结果表明,脂肪替代品能明显增加冰淇淋的膨胀率并改善其抗融化性,当无脂冰淇淋中脂肪替代品的含量达到3%时,其融化率与中脂冰淇淋接近。脂肪替代品还能明显增加无脂冰淇淋的硬度、G'和G"。用模糊数学的方法评价了无脂冰淇淋的感官指标,发现无脂冰淇淋中脂肪替代品的最佳添加量为3%。脂肪替代品能明显改善无脂冰淇淋的感官品质。  相似文献

以乳清蛋白WPC-80为基质制备脂肪替代品,替代中脂冰淇淋中25%的脂肪。随着脂肪替代率的增加,冰淇淋浆料黏度和膨胀率增大,抗融化率和硬度下降,制得的低脂冰淇淋的各项感官指标均与中脂冰淇淋相当。当替代全部脂肪时,所制得的无脂冰淇淋也有较好的感官接受性。  相似文献

以酶法水解的乳清蛋白WPC-80为基质制备脂肪替代品,替代中脂冰淇淋中25%的脂肪。随着乳清蛋白水解度的增加,冰淇淋浆料粘度和膨胀率略有下降,抗融化率提高,制得低脂冰淇淋的各项感官指标均优于对照组。当乳清蛋白的水解度为4%时,制得的脂肪替代品添加到冰淇淋中,各项感官指标最佳。  相似文献

实验选取籼糯和粳糯两个品种的糯米淀粉,研究了以糯米淀粉为基质的脂肪替代品对低脂冰淇淋品质的影响。结果表明:糯米淀粉加入低脂冰淇淋提高了浆料黏度,降低了冰淇淋成品的硬度,改善了冰淇淋的抗融化性。用模糊数学的方法评价了低脂冰淇淋的感官指标,发现脂肪替代率为25%的籼糯淀粉低脂冰淇淋的感官指标与中脂冰淇淋最接近。表明低脂冰淇淋中糯米淀粉的最适添加量为25%。  相似文献

将辛烯基琥珀酸马铃薯淀粉酯作为脂肪替代品代替配方中的奶油,进行了冰淇淋的制备试验。结果表明,冰淇淋配方为奶粉14%、白砂糖13%、蛋黄2%和复合稳定剂0.2%时,添加3.0%(w/w)该淀粉酯的无奶油冰淇淋制品其融化率下降、膨胀率提高,口感更加清凉、细滑;其它不同替代程度的低脂冰淇淋制品品质也较优良,整体品质明显优于添加3.0%(w/w)马铃薯原淀粉作为脂肪替代品制得的冰淇淋制品。结论为高黏度辛烯基琥珀酸马铃薯淀粉酯可以作为脂肪替代品部分或全部代替冰淇淋配方中的奶油,但相应冰淇淋的硬度略有增加。  相似文献

研究了籼米为基质脂肪替代品替代冰淇淋中不同脂肪含量对冰淇淋流变性质的影响。结果表明:随着冰淇淋配方中脂肪替代品含量增加或脂肪含量减少,冰淇淋浆料的黏度逐渐降低、冰淇淋的硬度逐渐降低、冰淇淋的黏性和弹性均逐渐下降。感官评定获得的冰淇淋的质构变化趋势与流变仪测定的冰淇淋黏弹性变化趋势一致,质构仪测定的冰淇淋硬度在8000g时感官评定结果最好。  相似文献

分别将商品饱和单甘酯和另一种富含亚油酸的不饱和单甘酯作乳化剂添加到全脂冰淇淋(脂肪含量为10%)和低脂冰淇淋(脂肪含量为4%)中,共研发出不饱和单甘酯全脂冰淇淋、饱和单甘酯全脂冰淇淋、不饱和单甘酯低脂冰淇淋和饱和单甘酯低脂冰淇淋四个产品。通过对四个产品的冰冷感、硬度、粘度、平滑程度和包口感等进行感官评价,发现脂肪含量及乳化剂的种类对冰淇淋的冰冷感、硬度、粘度、平滑感、包口感等都有影响,全脂冰淇淋比低脂冰淇淋更粘,更滑,更具有包口感,低脂冰淇淋比全脂冰淇淋更硬,冰冷感更强。通过对四种冰淇淋老化料液的膨胀率及冰淇淋成品的抗融性进行了比较,发现不饱和单甘酯能提高低脂冰淇淋的膨胀率,并且不饱和单甘酯冰淇淋比饱和单甘酯冰淇淋具有更好的抗融性。  相似文献

利用蛋清基脂肪替代品降低高脂冰淇淋中的脂肪,开发低脂冰淇淋。通过理化性质测量、感官评价和微观结构的观察,综合分析脂肪替代品在冰淇淋中的代脂肪效果。结果表明:脂肪替代率15%时,冰淇淋的气泡和脂肪总聚集数量多,膨胀率提高,从54.9%增大到72.6%,而融化率降低,从48.32%降低到24.3%。在脂肪替代率25%~30%时,冰淇淋的口感和接受度降低。因此,脂肪替代率15%时,冰淇淋的可接受度最佳。  相似文献

研究了小麦麸脂肪替代品(WBFS)部分和全部替代冰淇淋中的脂肪对冰淇淋品质的影响。结果表明:WBFS可以提高冰淇淋浆料的黏度,改善冰淇淋的膨胀率;全部脂肪被替代的冰淇淋(FFS)在抗融性、感官评定和质构方面表现出与常规冰淇淋(RF)相似或者略优的品质,而部分脂肪被替代的冰淇淋(MFS)却表现出较差的抗融性和差异明显的感官和质构特性。  相似文献

本文研究了不同类型的稳定剂和乳化剂在冰淇淋中的作用,以三种代表性的不同类型的稳定剂:卡拉胶(离子型多糖)、瓜尔豆胶(非离子型多糖)和明胶(蛋白质),以及具有不同亲水亲油性的乳化剂:单硬脂肪酸甘油酯(Glyceryl Monostearate, MG,HLB=3.8)和吐温80(HLB=15)作为研究对象,以冰淇淋的物理特性(粘度、膨胀率与融化率)和感官(粘稠度、顺滑性、口融性与颗粒感)为指标,讨论了稳定剂和乳化剂对冰淇淋品质的影响。结果表明,与吐温80相比,加入MG的冰淇淋膨胀率更高,抗融性更好,二者对浆料粘度的作用无显著性差异(P<0.05);三种稳定剂均可增大冰淇淋浆料的粘度,其中,卡拉胶较瓜尔豆胶和明胶对浆料粘度的影响差异显著(P<0.05),抗融性最强,瓜尔豆胶对膨胀率影响最大。其中MG与卡拉胶复配所得浆料粘度和抗融性最佳,分别为898.35 cp,融化率4.74%;与瓜尔豆胶复配所得冰淇淋膨胀率最高为66.95%。在此基础上,以MG作为乳化剂,复配瓜尔豆胶和卡拉胶,研究不同复配比例的稳定剂在冰淇淋中的作用。结果表明,稳定剂总添加量为0.25%时,卡拉胶与瓜尔豆胶的质量比为1:1.5,冰淇淋的浆料粘度可达1036.5 cp,融化率为17.4%,感官评分最高。  相似文献

Ice cream is a complex food matrix that contains multiple physical phases. Removal of 1 ingredient may affect not only its physical properties but also multiple sensory characteristics that may or may not be important to consumers. Fat not only contributes to texture, mouth feel, and flavor, but also serves as a structural element. We evaluated the effect of replacing fat with maltodextrin (MD) on select physical properties of ice cream and on consumer acceptability. Vanilla ice creams were formulated to contain 6, 8, 10, 12, and 14% fat, and the difference was made up with 8, 6, 4, 2, and 0% maltodextrin, respectively, to balance the mix. Physical characterization included measurements of overrun, apparent viscosity, fat particle size, fat destabilization, hardness, and melting rate. A series of sensory tests were conducted to measure liking and the intensity of various attributes. Tests were also conducted after 19 weeks of storage at −18°C to assess changes in acceptance due to prolonged storage at unfavorable temperatures. Then, discrimination tests were performed to determine which differences in fat content were detectable by consumers. Mix viscosity decreased with increasing fat content and decreasing maltodextrin content. Fat particle size and fat destabilization significantly increased with increasing fat content. However, acceptability did not differ significantly across the samples for fresh or stored ice cream. Following storage, ice creams with 6, 12, and 14% fat did not differ in acceptability compared with fresh ice cream. However, the 8% fat, 6% MD and 10% fat, 4% MD ice creams showed a significant drop in acceptance after storage relative to fresh ice cream at the same fat content. Consumers were unable to detect a difference of 2 percentage points in fat level between 6 and 12% fat. They were able to detect a difference of 4 percentage points for ice creams with 6% versus 10%, but not for those with 8% versus 12% fat. Removing fat and replacing it with maltodextrin caused minimal changes in physical properties in ice cream and mix and did not change consumer acceptability for either fresh or stored ice cream.  相似文献

The effects of fat replacers (Simplesse® D-100, N-Lite D, and inulin) on the melting characteristics, overruns, hardness, rheological parameters and sensory attributes of reduced (RF, 60.0 g/kg), low (LF, 40.0 g/kg), and nonfat (NF, 1.0 g/kg) ice creams were investigated. The magnitudes of the melting rates were in the order RF>LF>NF for samples that contained Simplesse® D-100 or inulin, but the reverse order was found for samples with N-Lite D. The nonfat ice creams had lowest overrun values of around 10%. Inulin-containing ice creams possessed higher overrun values than others ( P  > 0.05). The use of fat replacer decreased the hardness of ice creams. All ice cream samples showed pseudoplastic (shear-thinning) behavior. The addition of N-Lite D and inulin decreased the flow behaviour index of ice cream samples. The reduced and low fat ice cream samples were rated as similar to the control by a sensory panel. On the other hand, no correlations ( P  > 0.05) were observed between rheological parameters and sensory texture and mouthfeel.  相似文献

为了探究葵花籽油体富集物在冰淇淋中应用的可行性,以葵花籽油体富集物作为脂肪来源制备低脂冰淇淋,在无均质条件下研究葵花籽油体富集物添加量对低脂冰淇淋浆料和产品品质的影响。结果表明:冰淇淋浆料的黏度、储能模量和损耗模量都随葵花籽油体富集物添加量的增加而增大,当葵花籽油体富集物添加量为3.5%~4.0%时黏度与对照组相当;浆料中不易流动水和结合水的比例随着葵花籽油体富集物添加量的增加逐渐增大,在4.0%时达到最大;冰淇淋的膨胀率和抗融率随着葵花籽油体富集物添加量的增加先增大后减小;添加葵花籽油体富集物的冰淇淋色泽较差;冰淇淋的硬度和咀嚼性变化规律一致,都是随着葵花籽油体富集物添加量的增大呈现先减小后增大的趋势,弹性变化则相反;冰淇淋黏附性随着葵花籽油体富集物添加量的增加而升高;葵花籽油体富集物添加量为2.5%时冰淇淋感官评分最高。合适的葵花籽油体富集物添加量可以起到与棕榈油相似的效果,因此葵花籽油体富集物可以应用在冰淇淋中。  相似文献
