Heating Conditions and Bread-Making Potential of Substandard Flour   总被引:1,自引:0,他引:1  
ABSTRACT Heating weak bread flours (commercial cookie flour; commercial stone‐milled bread flour; Fundulea, a weak bread cultivar) at 80°C for 15 min had a positive effect on bread volume (P < 0.05). This positive effect was best seen when ascorbic acid was removed from bread formulation. Crumb springiness and fineness of grain, but not crumb hardness, were significantly improved after flour heating; cohesiveness improved with heated cookie flour (P < 0.05). After heating, flour a‐amylase content was lower; dough‐mixing stability of cookie flour doubled to 7.1 min but dropped from 18.0 to 4.8 min with standard bread flour. Heating offers possibility to upgrade substandard flour for bread‐making applications, especially in oxidant‐free dough system.  相似文献

The process of making a dough, allowing time for maturation, dispersing the dough in water and wet sieving/washing to obtain a protein fraction and starch milk was studied using response surface methodology by changing the water to flour ratio in dough making (400–710 g kg?1), maturation time (45–660 s) and the type of flour. Two grades of bread wheat flour and durum clear flour were studied. The effects of aging at ambient temperature for up to 29 days and the addition of ascorbic acid at 100 or 500 mg kg?1 flour on separation behaviour were also studied for freshly milled high‐grade (65% extraction) bread wheat flours at constant maturation time, 600 s, and at optimum farinograph water absorption value. The quantities and dry matter contents of the protein fraction and starch milk were measured; a sample of starch milk was centrifuged to obtain decantate, tailings and prime starch fractions, and the dry matter contents of each were determined. All the dried samples were also analysed for protein content. The fractional recoveries of dry matter and protein in the protein fraction, prime starch, tailings and decantate were calculated for each experiment. The acid values of flour oils were also determined on some aged flour samples. The results indicated superior separation characteristics in high‐grade wheat flour compared with lower‐grade flours. The water to flour ratio was more influential than maturation time within the range studied. Contrary to the initial expectation, no statistically significant effect of flour aging was observed in the studies with no additive, and ascorbic acid addition was not found to improve the wet separation behaviour, the separation behaviour becoming even worse at the 100 mg kg?1 level. Winter wheat was grown under various nitrogen (N) fertilizer regimes (with/without manure application) under calcareous sandy soils, control wheat being grown without fertilization. Six levels of N fertilizer were applied. The technological and baking characteristics of the wheat were closely related to N and nitrogen + manure (NM) fertilization. Contents of protein increased with increase in fertilization level, which also improved the rheological properties of dough and baking quality. N fertilization increased farinograph stability time, which increased with increasing flour protein content. NM fertilization affected protein content as well as farinograph stability time and farinograph maximum viscosity, thereby affecting the relationship between these properties. The increase in bread volume due to fertilizers was more noticeable with NM than with N. Application of 60 t ha?1 manure along with 200 kg ha?1 N onwards improved technological properties of flour in comparison with wheat grown with the basic N fertilizer only. 以燕麦粉为原料,以中强筋小麦粉为对照,研究燕麦粉与小麦粉不同配比混合粉的面团流变学特性和食品加工特性.结果认为,与小麦粉相比,燕麦蛋白质组分中清蛋白、醇溶蛋白含量较低,球蛋白含量高,谷蛋白含量稍低.燕麦粉峰值、最大、最终黏度均小于对照小麦粉.加入燕麦粉后,面团形成时间延长,稳定时间降低.用淀粉代替燕麦粉,同样添加量下面包及馒头比容、总评分降低,面条吸水率、总评分降低,失落率升高.当面粉取代量大于5%时,对混粉食品制作品质有显著影响.加入10%、25%、10%燕麦粉制作面条、馒头和面包是较为理想的配比.  相似文献

该文以不同吸水速率的小麦粉为基础,研究在相同的揉混条件下,其面团特性及馒头品质的变化。使用粉质仪将面团稠度达到最高时所用的加水量与消耗的时间的比值定义为吸水速率,测定不同吸水速率小麦粉其粉质特性、湿面筋含量、面筋指数、游离巯基与二硫键含量、面团质构特性、馒头比容与高径比、馒头的质构特性。研究结果表明,当小麦粉吸水速率从0.17 g/s增大到3.87 g/s时,面团的稳定时间及粉质质量指数显著下降。其湿面筋含量从38.81%下降到19.19%,二硫键含量从13.31μmol/g下降到9.05μmol/g。面团的质构特性在发酵0 min时呈先升高后降低趋势、在醒发45 min后整体呈下降趋势。馒头的比容从2.67 mL/g降低到2.27 mL/g、高径比从0.68降低到0.56,其硬度、胶着性、咀嚼性均成下降趋势。整体而言,吸水速率低的小麦粉其面团相对较硬且馒头较为筋道有嚼劲;吸水速率较高的小麦粉其面团硬度稍弱且馒头较为松软。  相似文献

ABSTRACT: The effects of protein quality, protein content, ascorbic acid, diacetyl tartaric acid ester of monoglyc-erides (DATEM), and their interactions on dough rheology and hearth bread properties were studied by size-exclusion fast protein liquid chromatography, Kieffer Dough & Gluten Extensibility Rig, and small-scale baking of hearth loaves. The effect of protein content was either positive or negative on hearth loaf characteristics, form ratio, and area, depending on the amount of the largest glutenin polymers in the flour. Ascorbic acid brought out the potential in the wheat flour known as protein quality. Ascorbic acid and DATEM strengthened the doughs and improved hearth bread characteristics.  相似文献

Two different green tea extracts (GTE‐A and ‐B) as a rich source of tea catechins were incorporated into a no‐time bread‐making process, where bread made from the unfrozen and frozen dough processes was compared by specific volume and texture profile. GTE‐A and ‐B both exhibited significant effects on bread volume and firmness, but to a different extent. GTE‐A with higher content of tea catechins (73%) at a level of 1.5 g kg?1 flour was found to lead to a significant reduction in bread volume in unfrozen dough process and an increment in firmness during storage for 4 days at ambient temperature (22 °C). GTE‐B, with a lower content of catechins (60%), had relatively mild effects on the bread quality. Significantly negative effects were evident starting at a higher level of 5.0 g kg?1 flour in unfrozen dough process. Frozen storage showed more predominant deteriorating effects than the GTEs over a period of 9 weeks frozen storage at ?20 °C. Copyright © 2006 Society of Chemical Industry  相似文献

Two different commercial bread wheat flours (BF‐I, 65% extraction and BF‐V, 86% extraction) were separated into gluten and starch milk by making a dough, allowing some time for maturation, dispersing the dough in water and wet sieving/washing. The effect of using of warm water (20–45 °C) for dough making and washing on separation was studied for BF‐I flour at 640 g kg?1 water to flour ratio of and 300 s maturation time, and the separation was found to improve with increase in temperature. The combined effects of water temperature (20–50 °C) and water to flour ratio (640–780 g kg?1 for BF‐I and 620–870 g kg?1 for BF‐V) were studied at 600 s maturation time. The quantities and dry matter contents of the gluten fraction and starch milk were measured; a sample of starch milk was centrifuged to obtain decantate, tailing and prime starch fractions, and the dry matter contents of each were determined. All the dried samples were also analysed for protein content, and the fractional recoveries of dry matter and protein in the gluten fraction, prime starch, tailings and decantate were calculated. The results indicated the optimum point for BF‐I flour to be the combination of optimum farinograph water absorption and 40 °C. BF‐V showed very poor separation behaviour within the ranges studied. At the optimum farinograph water absorption the use of warm water for dough making and 20 °C water for washing steps was also tried, but no significant improvement over the 20 °C results was obtained. © 2002 Society of Chemical Industry  相似文献

The rheological and baking properties of flaxseed/wheat composite flours were studied. Flaxseed flour was used to replace 50, 100, 150 and 200 g kg?1 of wheat flour in bread. Farinographic studies showed that water absorption, dough development time and mixing tolerance index increased as the amount of flaxseed flour increased, while dough stability decreased at 100, 150 and 200 g kg?1 of flaxseed flour substitution. The extensographic energy of dough also decreased at 150 and 200 g kg?1 flaxseed levels. The addition of increasing amounts of flaxseed flour caused a decrease in extensibility. Doughs containing 100, 150 and 200 g kg?1 flaxseed flour showed resistance to extension comparable to that of control dough. The specific volume of flaxseed flour breads was similar to that of control bread. Crust L, a, b values of breads with flaxseed flour were lower than those of control bread. Breads with flaxseed flour gave lower crumb L and b values and higher a values than control bread. The sensory properties showed that an acceptable bread could be produced using flaxseed flour up to a level of 200 g kg?1. Copyright © 2007 Society of Chemical Industry  相似文献

糯米粉由于直链淀粉含量很低而被赋予其独特的理化性质。将糯米粉与小麦粉进行复配,研究不同添加量对复配粉粉质特性、糊化黏度和面团流变学的影响,同时采用质构和感官评价的方法对馒头的品质进行评价,优化得到最佳复配比例。结果表明:随着糯米粉比例的增加,复配粉的峰值黏度、最低黏度、最终黏度和衰减值显著提高,糊化温度降低,面团的稳定性降低,粉质指数减小,同时改善了馒头的质地口感。当糯米粉添加量为10%~15%时使馒头的综合品质最佳,且对馒头的质构和感官特性有较大改善。  相似文献

We have studied mixing, rheology and stability of potato‐cereal flour doughs. These were prepared using samples of two varieties of cooked and cold‐stored potatoes. Dependent on variety a minimum duration of 24–48 h cold‐storage was required. Dough mixing torque plateau was inversely related to potato water content. This should be <79 g/100 g. It was also necessary to have a stable dough mixing torque plateau of >2 Nm at a specific total mechanical energy input of 18–22 kJ kg?1. The resting temperature of the dough was also inversely related to its strength (plateau elastic modulus at time zero). Target dough strength should be about 25 kPa in a bob‐cup. Above 15 °C it decreased as a function of time and within 1 h it became too sticky for commercial processing. At 4 °C the dough remained stable. Sufficient potato starch retrogradation is a pre‐requisite to make optimal potato‐cereal flour dough for commercial processing.  相似文献

Addition of raw black rice flour leads to deficient processability on bread making quality. One of the effective methods to modify the functional properties of black rice flour (BRF) composite dough is to extrude black rice flour (EBRF) before incorporation. This study investigated and compared the effect of BRF and EBRF addition level of 10%–50% on the rheology, microstructure of dough and bread quality. The rheological properties of composite dough were recorded by Mixolab, stress relaxation and tensile test. The substitution of EBRF presented higher water absorption but lower development time, protein weakening, starch gelatinization, starch gel stability and starch retrogradation than wheat flour dough. Both the BRF and EBRF dough presented solid-like behaviour, while the EBRF dough showed more viscous, higher resistance and extensibility than BRF dough. The dough microstructure of dough was observed by SEM, and a more compact structure of EBRF dough could be seen than BRF dough. The incorporation of EBRF in bread quality presented higher specific volume, lower bake loss and firmness than BRF bread. These findings indicated the potential utilisation value of extruded black rice flour in bread making.  相似文献

To study the effect of heat treatment on rye flour quality, rye flour was treated by steaming, high temperature and high pressure (HTHP) and extrusion and then the pasting properties of rye flour and rye‐wheat blend, the dough rheological and steamed bread (respectively, fermented by yeast and Chinese traditional starter – Laomian) making properties of rye‐wheat blend were investigated. All three kinds of heat treatment increased the viscosity of rye flour, with the peak viscosity value followed the order 1744 cP (by steaming) >823.5 cP (by HTHP) >669 cP (by extrusion) > 626.5 cP (untreated). Dough and gluten made from mRFh (HTHP‐treated rye flour and wheat flour blend) had higher storage modulus (G′) and loss modulus (G″), which contributed to better extensibility and deformation capability. Steamed bread fermented by Laomian (LSB) made by mRFh had larger specific volume (2.26 mL g?1), lower hardness (3510.93 g) and higher sensory scores (82.63), comparable to the quality of control samples, indicating the feasibility of adding rye flour into wheat flour for healthy product development without compromising the taste and texture.  相似文献

The main objective of this study was to increase the folate content in Egyptian baladi bread using germinated wheat flour (GWF). The effect of germination temperature and drying conditions on the folate content of wheat grains was studied. Wheat flour was substituted with unsieved and sieved GWF at different levels and the effects on folate content and the rheological properties of dough were determined. Germination of wheat grains resulted in a 3- to 4-fold higher folate content depending on the germination temperature. Maximum folate content (61 μg/100 g dry matter (DM)) occurred at 30 °C. Drying did not affect folate content in germinated grains. After replacement with GWF, folate content in both flour and bread increased 1.5- to 4-fold depending on the level of replacement. Rheological properties of dough were adversely affected by increasing replacement level (as determined by farinograph). While the folate content in bread was as high as 66 μg/100 g DM at complete replacement of flour with sieved GWF, the bread was dark and layers were not separated. After replacement of half of the flour with sieved GWF (50 g/100 g), the baladi bread was acceptable with respect to colour and layer separation. The folate content in this bread was 50 μg/100 g DM, compared with 30 μg/100 g DM in bread without GWF (0 g/100 g).  相似文献

Gluten‐free (GF) sourdough was prepared from wheat sourdough and analysed both in fresh (GFS) and dried forms (DGFS). The gluten content in each GF sourdough sample was <20 mg kg?1. The dough leavening capacity and the properties of the bread samples were investigated and compared to those of bread prepared using bakery yeast (Saccharomyces cerevisiae). Two commercial rice‐based mixtures (different for the presence/absence of buckwheat flour) were used to prepare bread samples. In GFS, lactic acid bacteria (LAB) and yeasts were found in amounts corresponding to 108 and 107 CFU g?1, respectively, whereas both LAB and yeasts were detected in lower amounts (about 106 CFU g?1) in DGFS. When used in bread‐making, both GFS types produced significant dough acidification and exhibited good dough development during proofing, resulting in loaves with specific volume values between 3.00 and 4.12 mL g?1, values similar to those obtained for reference bread (3.05÷4.15 mL g?1). The use of GFS was effective in lowering the bread staling rate during storage for up to 7 days.  相似文献

Effect of blending 50 to 250 g kg−1 cowpea flour in wheat flour on rheological, baking and sensory characteristics of bread, chapati, cookies and muffins was studied. Farinograph water absorption, dough development time, mixing tolerance index and dough stability increased significantly with increased amount of cowpea flour. Incorporation of cowpea flour lowered gelatinisation time and peak viscosity. Loaf volume and overall acceptability scores of bread were reduced significantly beyond 150 g kg−1 incorporation of cowpea flour. There were significant changes in specific volume and overall acceptability scores of muffins, registering an initial improvement up to 50 g kg−1 and a significant decline thereafter. © 1999 Society of Chemical Industry  相似文献

BACKGROUND: The effects of different phenolic acids on the rheological properties and gluten proteins of hard wheat flour dough and bread were investigated. Caffeic, ferulic, syringic and gallic acids were each blended with hard wheat flour at a concentration of 4.44 µmol L?1 g?1 flour. RESULTS: Mixing time and tolerance were reduced with the addition of phenolic acids. The phenolic acids reduced the maximum resistance to extension (Rmax) and increased the extensibility of dough, with effects in the following order: gallic < syringic < ferulic < caffeic acid. The effect on Rmax was more pronounced in overmixed dough. Loaf volume was most significantly decreased with the addition of caffeic acid. Extraction of sodium dodecyl sulfate‐soluble high‐molecular‐weight proteins was increased in both mixed and fermented doughs by the addition of ferulic and caffeic acids. The order of influence of the phenolic acids on the rheological properties and protein structure of dough and bread was consistent with that of their antioxidant activity. CONCLUSION: The addition of caffeic and ferulic acids reduced Rmax and increased the extensibility of hard wheat flour dough by modifying the high‐molecular‐weight gluten, which resulted in decreased bread volume. The application of Chinese steamed bun starter dough (CSB-SD) in breadmaking was investigated. The activation of CSB-SD to activate the growth of lactic acid bacteria (LAB) and to increase the number of yeast, prior to making bread, was conducted by mixing CSB-SD with wheat flour and water and then incubating for 24 h. Wheat flour was then substituted by this activated CSB-SD (aCSB-SD) at 10%, 30%, and 50% (w/w) to make bread. Dough and bread properties were studied comparing to the control (without aCSB-SD). From the farinograph results, a high aCSB-SD substitution level resulted in a less stability in dough with a higher degree of softening. Extensigraph results suggested that after aging, all the substituted dough yielded a greater resistance to extension with lower extensibility values than the control. Substitutions with 30% and 50% (w/w) aCSB-SD significantly increased the total CO(2) gas generation. Scanning electron microscopy SEM images of the 30% and 50% (w/w) substituted dough showed a well-developed gluten matrix. The 50% (w/w) substituted breads obtained a greater risen volume, finer crumb grain, and retained more softness after 5-d storage than the control. In addition, both the 30% and 50% (w/w) substituted breads showed a slightly increased mold stability, as compared to the 0% and 10% (w/w) substituted breads.  相似文献
