以豆奶和牛奶为原料,通过干酪制作条件的优化研究,得出了生产混合型干酪的重要工艺参数和技术要点。实验表明,用含有20%豆浆的牛奶作为混合原料奶,消毒后加入2%的发酵剂和凝乳酶,经1-2月成熟,即可得到风味与纯牛奶干酪无显著差异的优质混合型干酪。  相似文献

采用3×3拉丁方试验设计,3个奶酪槽中原料乳的蛋白质与脂肪质量比分别为1∶1,1.2∶1,1.3∶1(通过添加脱脂干奶粉调整蛋白质含量)。研究蛋白质与脂肪比例对Mozzarella干酪的品质的影响。结果表明,随着原料乳中蛋白质脂肪比例的增加,干酪的含水量、油脂析出性显著降低(P<0.05),干酪的弹性显著升高(P<0.05),蛋白质与脂肪比例对Mozzarella干酪的蛋白质水解没有显著的影响。  相似文献

研究了原料奶脂肪与干物质不同比例对水牛奶Mozzarella鲜干酪质地的影响.实验以原料奶脂肪与干物质比例、实验批次和干酪槽为试验因素,设计3×3拉丁方实验方案.结果表明,原料奶的脂肪与干物质比例对干酪的硬度有极显著影响,对干酪的黏着性、耐嚼性、油脂析出性和成品率有显著影响,对干酪的弹性和融化性无显著影响.原料奶的脂肪与干物质比例为0.5时,干酪的总体品质较差.  相似文献

用8种不同品种大豆制作的豆乳与牛奶混合,按照切达干酪生产工艺制作双蛋白切达干酪,以同批次纯牛奶制作的干酪为对照组,对产品的得率、色泽、质构和感官特性等指标进行了分析和比较。实验结果表明,各组双蛋白干酪均比纯牛奶干酪的得率高,各组双蛋白干酪之间得率存在较大差异。质构测定结果表明,不同大豆品种生产的双蛋白干酪在硬度、弹性和粘聚性等指标方面具有较大差异。感官评价中,除添加小粒豆8号豆乳的双蛋白干酪带有较浓豆腥味外,其余组与对照组相差不大。相关性分析结果表明,大豆蛋白中球蛋白和β-伴球蛋白的比值(11S/7S)与双蛋白干酪的硬度和粘聚性显著相关,而大豆的蛋白含量、脂肪含量和植酸含量等指标与双蛋白干酪的品质指标无显著相关性。  相似文献

对鹰嘴豆复合干酪与牛乳干酪成熟过程中的理化性质变化进行研究.通过对比试验,得出以下结论:两种干酪在成熟过程中水分含量均呈下降趋势,复合干酪的水分含量高于牛乳干酪;脂肪、蛋白质含量和酸度均呈缓慢增加趋势,复合干酪的脂肪、蛋白质含量及酸度均低于牛乳干酪.  相似文献

目的分析水牛α_(S1)-酪蛋白多态性对马苏里拉干酪品质的影响。方法以α_(S1)-酪蛋白AB型、α_(S1)-酪蛋白BB型和混合组水牛乳样为原料分别制成全脂马苏里拉干酪,比较3组水牛乳样和干酪在组成、功能特性和微观结构等方面的差异。结果α_(S1)-酪蛋白AB型水牛乳在脂肪、蛋白质和总固形物含量上显著高于BB型。制成马苏里拉干酪后,AB型干酪的蛋白质含量显著高于BB型和混合组干酪。BB型和AB型干酪在硬度、咀嚼性和胶黏性上显著高于混合组。结论不同基因型α_(S1)-酪蛋白水牛乳的乳成分存在差异,α_(S1)-酪蛋白多态性与水牛乳马苏里拉干酪的组成、质构和融化特性等存在显著关联。  相似文献

对天然干酪、脂肪两种主要原料进行筛选,并对复配的稳定剂和乳化盐进行优化,通过正交试验确定了耐高温再制干酪的最优主基料配方为:低脂切达干酪20%;成熟期3个月的切达20%;氢化大豆油6%;卡拉胶0.25%;变性淀粉0.625%;黄原胶0.125%;焦磷酸钠1.0%;六偏磷酸钠0.5%.该配方下制备的耐高温再制干酪进行微波和煎炸测试,具有优良的耐高温性能.  相似文献

在牛乳中添加10%豆乳,按照Cheddar干酪加工方法生产双蛋白干酪,以纯牛奶生产的干酪作为对照,利用气质联用分析成熟后的两种干酪的风味物质,并对两种干酪的基础理化成分进行了分析。结果表明:对照组干酪检测出8种风味物质,双蛋白干酪检测出12种风味物质,比对照组干酪多检测出1-己醇、5-羟基-2,7-甲基-4-辛酮、2-戊烷基呋喃、壬醛等四种风味物质,在一定程度上丰富了干酪的风味。基础理化成分结果显示,双蛋白干酪较对照组干酪蛋白质含量高,脂肪含量相对低,并且双蛋白干酪中16种氨基酸含量均比对照组高。  相似文献

将豆奶与牛奶按一定比例混合生产干酪,不仅能保留牛奶干酪的传统风味,还可实现大豆与牛奶所含蛋白质和氨基酸的互补,为人体生长发育、各种生理活动及组织修复提供所需的营养成分,适合中国消费者食用。本实验以豆乳添加量、CaCl2添加量、凝乳酶添加量、预酸化pH值为因素先进行单因素实验,并在此基础上进行L9(34)正交试验,根据凝乳效果(感官评价)进行分析,确定豆乳-牛乳混合型新鲜干酪最佳工艺参数为:豆乳添加量为15%,CaCl2添加量为0.05%,凝乳酶添加量为0.01%,预酸化pH值为5.6。  相似文献

以鲜牛乳为原料,研究了新鲜软质干酪的制作工艺,采用L9(34)正交试验的方法,研究了不同发酵剂菌种添加比例、发酵温度、切割pH值对成品干酪滋味口感、色泽和涂抹性的影响,最终确定了该产品生产的最佳配方和工艺条件:菌种比为1:1(质量比),发酵剂添加量为3%(质量分数),发酵温度为37℃,切割pH值为4.6。  相似文献

本文主要研究了豆奶干酪成熟过程中蛋白水解的变化,并与纯牛乳干酪进行比较。结果表明:豆奶干酪中pH4.6 SN 和12%TCA SN随着时间的延长逐渐增高,而且pH4.6 SN的增长速度比12%TCA SN快,这与纯牛乳干酪是一致的,但豆奶干酪的可溶性氮低于同一时期的纯牛乳干酪。  相似文献

Mozzarella cheese was made from buffalo milk (6% fat) or from partially skimmed buffalo milk (2 and 4% fat) with 0.5 and 1% denatured whey protein. Adding whey protein to buffalo milk decreased rennet coagulation time and curd tension whereas increased curd synaeresis. Addition of whey protein to cheese milk increased the acidity, total solids, ash, salt, salt in moisture, also some nitrogen fractions. The meltability and oiling‐off values increased but the calcium values of mozzarella cheese decreased. The sensory properties of low fat mozzarella cheese were improved by addition of whey protein to the cheese milk.  相似文献

The aim of this study was to evaluate the milk properties and the yield and sensory properties of Cantal cheese made with milk from Holstein or Montbéliarde cows milked once or twice daily. Sixty-four grazing cows [32 Holstein (H) and 32 Montbéliarde (M) cows] in the declining phase of lactation (157 d in milk) were allocated to 1 of 2 equivalent groups milked once daily (ODM) or twice daily (TDM) for 7 wk. The full-fat raw milk collected during 24 h from the 4 groups of cows (M-TDM, M-ODM, H-TDM, and H-ODM) was pooled and processed into Cantal cheese 4 times during the last 4 wk of the experimental period. In all, 16 cheeses were made (2 milking frequencies × 2 breeds × 4 replicates) and analyzed after a ripening period of 15 and 28 wk. The results showed that for both breeds, the pooled milk content of fat, whey protein, casein, total protein, and phosphorus as well as rennet clotting time and curd firming time were significantly higher with ODM cows, whereas the casein-to-total protein ratio was lower, and lactose, urea, calcium, and free fatty acids contents of milk remained unchanged. The acidification and draining kinetics of the cheese as well as cheese yields and the chemical and rheological properties of the ripened cheese were not significantly modified by milking frequency. For both breeds, the cheeses derived from ODM cows had a slightly yellower coloration but the other sensory attributes, except for pepper odor, were not significantly affected by milking frequency, thereby demonstrating that ODM does not have an adverse effect on the sensory properties of Cantal cheese. Compared with that of Holstein cows, milk from Montbéliarde cows resulted in a higher cheese yield (+1.250 kg/100 kg of milk) and ripened cheeses with lower pH, dry matter, calcium, sodium chloride, and water-soluble nitrogen concentrations. These cheeses had also a less firm and more elastic texture, a more acidic taste, and a yogurt/whey aroma.  相似文献

目的考察添加豆乳对Mozzarella混合干酪的微观结构、功能和质构特性的影响,为进一步增加豆乳的添加比例及优化混合干酪的生产工艺提供理论基础。方法参考传统Mozzarella干酪的生产工艺,按牛乳中豆乳的添加量分别为5%、10%、15%、20%、25%(V:V)制作混合干酪样品,以纯干酪为对照,采用化学分析方法对混合干酪样品的水分、脂肪和蛋白质含量进行了检测;通过扫描电子显微镜对干酪样品的微观结构进行了观察,并对Mozzarella干酪的两个重要功能特性,拉伸性和融化性进行测定;最后,利用质构仪对干酪样品包括硬度,弹性和粘附性等质构特性进行表征。结果和纯牛乳干酪对比,添加了豆乳的于酪具有更多的水分,更少的蛋白质和脂肪。5%的豆乳添加量,也会导致蛋白胶束变粗,拉伸长度下降。而无论豆乳添加总量是多少,豆乳含量的添加对干酪的融化直径都没有显著性影响。豆乳的添加,会造成硬度和弹性的降低,粘附性增大,添加量10%及以上含量的豆乳,效果更为显著。本试验对干酪样品的后熟进行了研究,除了微观结构会发生变化外,功能和质构特性的变化均不明显。结论豆乳的添加主要对干酪的拉伸性和微观结构产生重要的影响,这对后期的工艺优化具有重要的启发意义。  相似文献

Teleme cheeses were manufactured from ewe's, goat's and cow's milk and mixture of ewe's and goat's milk. Physicochemical and biochemical analyses of the cheeses at various stages of ripening and storage were performed. Cheeses made from goat's milk had lower moisture content than those made from other milks. No significant differences in the mean values of protein, salt and water activity (a w ) of the different cheeses at all ages studied were found. Cheeses from goat's and cow's milk had higher contents of fat and fat in dry matter (FDM) compared to that of cheeses from ewe's milk and mixed milk. Significant differences were observed in the yield and yield on 56% moisture: cheeses from ewe's milk gave the highest yield and cheese from cow's milk the lowest. Significant differences were found in the ashes content of the different cheeses at all ages. No differences in cholesterol and cholesterol/fat contents of the four types of cheeses were found. Main and trace elements showed variability among the four cheeses.  相似文献
