人类对有益元素的关注主要是源于人体健康和地方病的研究。随着人们物质生活的提高,对健康的要求日益增加,有益元素的生物地球化学循环逐渐被广泛研究,主要包括钙、铁、锌、硒、锰、硅等。这些元素通过土壤进入食物链,进而影响人类健康,因此,土壤有益元素对人体及其在生态环境中生物地球化学循环过程中的作用已成为近年来国内外环境领域研究的热点。对动植物必需的有益元素钙、铁、锌、硒、碘的研究进展进行了综述,总结得出,土壤中有益元素的研究不仅仅需要关注其在生物地球化学循环中所起的作用,更应当结合土壤中有益元素与其他元素的作用机制来考虑其生物地球化学行为以及其在循环过程中的作用机理。 相似文献

分析百香果果酒发酵工艺及香气成分。对百香果实施有效发酵,并保证相关人员对百香果酵母发酵、初始糖度发酵以及SO_2添加量发酵这三个过程有一个全面的了解。通过各项分析,百香果果酒的最佳发酵工艺表现在SO_2添加上,这就应保证百香果果酒中SO_2添加量在90mg/kg这一范围内。其中初始糖度为23%,酵母添加量为0.4%。通过香气分析可知,其中含有10种香气成分,以醇类化合物为主。通过对百香果果酒发酵工艺及香气成分的把握,便于丰富果酒品种,对于果酒市场的拓宽也具有重要意义。 相似文献

(1) Background: Wine contains a variety of molecules with potential beneficial effects on human health. Our aim was to examine the wine components with high-resolution mass spectrometry including high-resolution tandem mass spectrometry in two wine types made from grapes with or without the fungus Botrytis cinerea, or “noble rot”. (2) For LC-MS/MS analysis, 12 wine samples (7 without and 5 with noble rotting) from 4 different wineries were used and wine components were identified and quantified. (3) Results: 288 molecules were identified in the wines and the amount of 169 molecules was statistically significantly different between the two wine types. A database search was carried out to find the molecules, which were examined in functional studies so far, with high emphasis on molecules with antiviral, anti-inflammatory and anticancer activities. (4) Conclusions: A comprehensive functional dataset related to identified wine components is also provided highlighting the importance of components with potential health benefits. 相似文献

Chili pepper (Capsicum annuum L.) is one of the most popular fresh vegetables or ingredients (condiments) that provide natural flavor and color. Its color is provided by carotenoids and its flavor is provided by capsaicinoids, which are considered bioactive compounds due to their beneficial effect on health. Moreover, the chili pepper also contains other bioactive compounds, such as phenols and vitamin C. The main process for its preservation and marketing is drying, during which bioactive compounds can be degraded. It is commonly accepted that oxidized low-density lipoprotein (ox-LDL) plays an important role in coronary heart disease (CHD)
and etiologically related atherogenesis. Consumption of wine may contribute to the low risk of CHD in the Mediterranean population.
These findings raise the question of the in vivo antioxidant role of wine phenolic compounds after a prolonged supplementation period in healthy human volunteers. We found
that subjects, receiving 2 g/d of an alcohol-free red wine-extracted phenolic compound (RWPC) mixture for 14 d (which was
equivalent to about 1 L/d of the red wine), exhibited an increase in the plasma antioxidative capacity and in LDL vitamin
E by blood sampling under fasting conditions. The fact that the LDL Cu2+-oxidizability was not decreased can be explained by both the lack of phenolic compound affinity for the lipoprotein particle,
highlighted by LDL dialysis, and the insufficient increase in LDL vitamin E, as shown by the relationship between vitamin
E content and oxidation resistance of LDL evidenced by literature data. These results support that RWPC could play a coantioxidant
role, similar to that of vitamin C, possibly accounting for their LDL vitamin E sparing effect and their beneficial role in

创新性地将红酒、黄酒提取物添加到所研制的复合护手霜中。检测其理化指标、感官指标及卫生指标,均符合行业标准。考察了搅拌时间、温度对乳化效果的影响,结果表明温度为75℃~80℃,时间为15min时乳化效果最好。人体手部皮肤涂抹试验表明该护手霜具有较好的滋润作用,可以改善手部粗糙的皮肤。对深度开发黄酒、红酒产品有一定的参考价值。 相似文献
