紫背天葵酸豆奶的研制   总被引:3,自引:3,他引:0  
以紫背天葵和无腥味大豆为主要原料,对紫背天葵酸豆奶的发酵工艺进行了研究。通过单因素和正交试验,得出该产品的最佳生产工艺条件为:紫背天葵在50℃保温处理50 min后,水中加入200 mg/LZn~(2+),1.5 g/L Ca(OH)_2,90℃条件下热烫3 min,加2倍水打浆得黏稠的紫背天葵汁;利用紫背天葵汁良好的持水性和黏稠性,代替人工合成稳定剂添加到豆水质量比1:8的豆奶中,加入量为35%,同时加入6%蔗糖和2%葡萄糖,接种4%等比混合的保加利亚乳杆菌和嗜热链球菌,42℃发酵4 h,可制得色泽良好、组织均匀细腻、稳定性好、酸甜爽口、兼有紫背天葵和酸豆奶两者的营养、保健功能于一体的紫背天葵酸豆奶。  相似文献

试验利用无腥味大豆为主要原料生产酸豆奶 ,通过正交试验确定了无腥大豆加工酸豆奶的最佳工艺条件。结果表明 ,大豆与水之比为 1∶10 ,乳酸菌数为 16× 10 4 个 /mL ,添加葡萄糖 5 %、蔗糖 4 %、牛奶 30 %和稳定剂 0 .2 % ,在 4 0℃发酵 5h ,可制得色泽洁白 ,组织细腻 ,香味浓郁 ,口感好 ,无豆腥味 ,营养价值高的酸豆奶  相似文献

美国伊利诺斯大学近年对豆奶生产方法进行了研究和改进。这种独特的豆奶加工方法称为美国伊利诺斯大学豆奶加工法。这种豆奶的成分为全大豆、水、糖和赋香剂。其生产工艺包括:浸泡大豆、用0.5%的碳酸氢钠漂白大豆、用锤式磨加水研磨大豆、豆浆加热至93℃,均质、中和、稀释、添加糖和赋香剂,巴氏灭菌、再次均质。浸泡的大豆在研磨之前用碳酸氢钠漂白可以使大豆中的酶失活,这样可彻底防止豆奶产生氧化的异味,使豆奶味道平和。漂白也可使大豆中的胰蛋白酶抑制素失活。通过浸泡和漂白可使大豆的组织软化使磨出的豆奶口感好而且胶体稳定性好。均质的温度和压力也很重要。均质温度为93℃、压力245K g/cm~2。这样豆奶冷藏2个月后也不会产生固形物—液体的离析现象。豆奶稀释到蛋白质含量不超过1%则使其胶体稳定性不受影响。检测证明豆奶中81%的颗粒为3.4—7.3微米,其粒度比规定的胶体颗粒要大。以生大豆计,豆奶的蛋白质和总固形物的利用率分别为99%和90%。  相似文献

以不同质量浓度的维生素C为阳性对照,研究鲜榨紫色胡萝卜汁体外抗氧化活性,并与橙色胡萝卜汁和白色萝卜汁做对比。分别采用Folin-酚法和pH示差法测定了紫色胡萝卜汁的花青素含量和总酚含量。结果表明,紫色胡萝卜汁体外对·OH、H2O2、O2-·具有较高的清除率,橙色胡萝卜汁和白萝卜汁对·OH、H2O2的清除率较紫色胡萝卜汁低,且对O2-·几乎无清除作用。鲜榨紫色胡萝卜汁中总酚含量23.90 mg/mL,花青素含量287.62 mg/L。0.1 mL稀释5倍的紫色胡萝卜汁对·OH的清除率为50.74%,相当于质量浓度为3 100 mg/L的维生素C对·OH的清除率;0.5 mL稀释15倍的紫色胡萝卜汁对H2O2的清除率为56%,相当于700 mg/L维生素C的清除率;1.5 mL稀释20倍的紫色胡萝卜汁对O2-·的清除率为51.85%,相当于40 mg/L维生素C对O2-·的清除率。  相似文献

本文以核桃和大豆为原料,不添加食品添加剂制备核桃豆奶植物蛋白饮料。为了研究核桃豆奶植物蛋白饮料加工工艺对稳定性的影响,采用常温放置方法观察产品的稳定性,同时利用Turbiscan Lab稳定性分析仪对核桃豆奶植物蛋白饮料的稳定性进行考察,以产品稳定性指数(TSI)为指标,采用单因素实验对大豆添加量、定容后均质压力、定容后均质温度和无菌均质压力进行了分析,并在单因素实验的基础上,采用正交试验对加工工艺条件进行优化,结果表明核桃豆奶植物蛋白饮料最佳的工艺条件为:大豆添加量为12%,定容后均质压力为25Mpa,温度70℃,无菌均质压力为35Mpa,此条件下制得的核桃豆奶植物蛋白饮料的稳定性指数为1.48,产品状态均一稳定。  相似文献

以浓缩枣汁、大豆为原料研制复合蛋白饮料,探讨了复配乳化增稠剂对红枣豆奶稳定性的影响。在单因素的实验基础上,应用正交实验确定复合增稠剂的最佳配比和添加量范围,通过Box-Benhnken响应面法考察了复合增稠剂、蔗糖脂肪酸酯、蒸馏单硬脂酸甘油酯及其交互作用对红枣豆奶稳定性的影响,利用软件Design Expert 8.0.6.1对实验数据进行回归分析,得到二次多项式回归方程预测模型。结果表明,采用复合增稠剂0.6%(黄原胶∶瓜尔豆胶∶羧甲基纤维素钠之比为4∶2∶3)、蔗糖脂肪酸酯0.10%、蒸馏单硬脂酸甘油酯0.04%组合成的稳定剂能有效提高红枣豆奶的稳定性,产品口感细腻,品质最佳。  相似文献

目的:探讨灵芝菌发酵豆奶的条件及其发酵过程中胀气因子(水苏糖、棉子糖)含量的变化,为生产发酵型灵芝豆奶提供基础.方法:以响应面分析法优化豆浆浓度及糖的添加量,采用HPLC法测定水苏糖、棉子糖的舍量.结果:灵芝菌发酵豆奶的最佳基质组成为豆浆100%.葡萄糖1.657%:水苏糖和棉子糖的起始含量分别为0.32 mg/mL和0.48 mg/mL,经72 h发酵,水苏糖未检出,棉子糖含量降至0.06 mg/mL.结论:利用灵芝菌发酵豆奶可提高其营养价值并消除大豆胀气因子.  相似文献

A 9% whey protein (WP) isolate solution at pH 7.0 was heat-denatured at 80°C for 30 min. Size-exclusion HPLC showed that native WP formed soluble aggregates after heat-treatment. Additions of CaCl2 (10–40 mM), NaCl (50–400 mM) or glucono-delta-lactone (GDL, 0.4–2.0%, w/v) or hydrolysis by a protease from Bacillus licheniformis caused gelation of the denatured solution at 45°C. Textural parameters, hardness, adhesiveness, and cohesiveness of the gels so formed changed markedly with concentration of added salts or pH by added GDL. Maximum gel hardness occurred at 200 mM NaCl or pH 4.7. Increasing CaCl2 concentration continuously increased gel hardness. Generally, GDL-induced gels were harder than salt-induced gels, and much harder than the protease-induced gel.  相似文献

The levels of bisphenol-F-diglycidyl ether (BFDGE) were quantified as part of a European survey on the migration of residues of epoxy resins into oil from canned fish. The contents of BFDGE in cans, lids and fish collected from all 15 Member States of the European Union and Switzerland were analysed in 382 samples. Cans and lids were separately extracted with acetonitrile. The extraction from fish was carried out with hexane followed by re-extraction with acetonitrile. The analysis was performed by reverse phase HPL C with fluorescence detection. BFDGE could be detected in 12% of the fish, 24% of the cans and 18% of the lids. Only 3% of the fish contained BFDGE in concentrations considerably above 1mg/kg. In addition to the presented data, a comparison was made with the levels of BADGE (bisphenol-A-diglycidyl ether)analysed in the same products in the context of a previous study.  相似文献

Microgels are ‘soft’ microscopic cross-linked polymeric particles that are being increasingly exploited in a variety of industries for rheology control, encapsulation and targeted delivery. They are valued because of the ability to tune their functionality to address specific applications in oil recovery, coatings, drug delivery, cosmetics, personal care and foods. Food microgels are typically biopolymer hydrogels in the form of microspheres, nanospheres (also called nanogels), spheroids and fibres. The utilisation of engineered microgels in foods has so far been limited, despite their great potential to address several needs in the food industry, including: satiety control, encapsulation of phytonutrients and prebiotics, texture control for healthier food formulations (e.g. reduced fat products), and targeting delivery to specific areas in the digestive tract. We review the scientific and patent literature on the utilisation and manufacturing methods for producing microgels with an emphasis on micro-hydrogels for food applications.  相似文献

Joubert and Burns prepared a large number of fractions from the high-sulphur proteins of wool and estimated their molecular weights and amino-acid compositions. Their data have been re-examined in order to look for statistically significant interrelations between amino acids and between the proportion of various amino acids and molecular weight. Statistical analysis of the data is also used to examine the credibility of some hypotheses concerning the mechanism of keratin biosynthesis and to provide further evidence for the existence of families of proteins within the high-sulphur fractions of wool.  相似文献

The European Commission's, Quality of Life Research Programme, Key Action 1—Health, Food & Nutrition is mission-oriented and aims, amongst other things, at providing a healthy, safe and high-quality food supply leading to reinforced consumer confidence in the safety of European food. Its objectives also include the enhancing of the competitiveness of the European food supply. Key Action 1 is currently supporting a number of different types of European collaborative projects in the area of risk analysis. The objectives of these projects range from the development and validation of prevention strategies including the reduction of consumers risks; development and validation of new modelling approaches; harmonization of risk assessment principles, methodologies, and terminology; standardization of methods and systems used for the safety evaluation of transgenic food; providing of tools for the evaluation of human viral contamination of shellfish and quality control; new methodologies for assessing the potential of unintended effects of genetically modified (genetically modified) foods; development of a risk assessment model for Cryptosporidium parvum related to the food and water industries; to the development of a communication platform for genetically modified organism, producers, retailers, regulatory authorities and consumer groups to improve safety assessment procedures, risk management strategies and risk communication; development and validation of new methods for safety testing of transgenic food; evaluation of the safety and efficacy of iron supplementation in pregnant women; evaluation of the potential cancer-preventing activity of pro- and pre-biotic ('synbiotic') combinations in human volunteers.
