双螺杆挤出改性处理脱脂玉米蛋白粉。以脱脂玉米蛋白粉含水量、挤出温度、螺杆转速为响应因素,可溶性蛋白含量为响应值,采用响应面分析方法,确定脱脂玉米蛋白粉挤出改性的最佳工艺条件。结果表明:物料含水量68%、挤出温度163℃、螺杆转速30Hz(225r/min)时,挤出脱脂玉米蛋白粉中可溶性蛋白含量最高,为3.43%。采用十二烷基硫酸钠-聚丙烯酰胺凝胶电泳(SDS-PAGE)测定挤出改性后玉米可溶性蛋白的分子质量分布,结果显示其分子质量介于3500~14300D之间,且主要是分子质量为3500~6500D的多肽。改性后的玉米蛋白粉其理化性质都有了较明显的改善,说明双螺杆挤出改性玉米蛋白粉效果明显,切实可行。  相似文献

This study presents a potential application for adding value to corn gluten meal, which is often used as animal feed and underutilized in food industry. This study is aimed to improve water holding ability of zein-rich by product corn gluten and investigate possibility of using it as an emulsifier. The potential use of microfluidization (500–1250 bar and 25 °C) and pH shifting (to pH6, 8, and 10) as a modification process for corn gluten meal and their effects on emulsifying properties were investigated. The formulations used for CGM(g):corn oil (mL) mixtures were 5:15, 5:30, 5:50, 10:15, 10:30, 10:50, 15:15, 15:30, and 15:50. Microfluidization and pH modification decreased the particle size of emulsions, resulting in the formation of tissues and micropores, and a consequent increase in surface area and water-holding capacity. pH shifting in dispersions around neutrality (pH6 and pH8) provided improvements in emulsion properties; however, excessive shifting (pH10) caused protein denaturation. Herschel-Bulkley model was well-fitted to explain flow behaviors. Flow and viscoelastic measurements showed that all formulations exhibited shear thinning and elastic gel-like behavior. The sedimentation rate, measured using LUMiSizer, was decreased by microfluidization and pH modifications. This study showed that these treatments can be used to convert an underutilized material into a valuable one in food industry.  相似文献

Corn gluten meal with good emulsifying activity and emulsion stability may have potential in food uses. Commercial corn gluten meal from various producers had a pH around 4 and showed no emulsifying activity. Reducing the particle size to below 15 µm or increasing the pH to 6.6 (with particle size above 53 µm) did not improve the emulsifying activity. When the particle size was reduced to below 44 µm and the pH was adjusted to 6.6 or above, good emulsifying activity and good emulsion stability could be obtained. The emulsifying activities of corn gluten meals (<44 µm) from four different producers at around pH 8 ranged from 49.3 to 51.5 and the corresponding emulsion stabilities ranged from 39.7 to 49.5. There was no significant variation in emulsifying activity between pH 6.9 and 7.8 when NaOH, LiOH and KOH were used to adjust the pH, but LiOH‐ and KOH‐adjusted meal at around pH 7.8 showed better emulsion stability than NaOH‐adjusted meal. Good emulsifying activity of corn gluten meal could be obtained in NaCl solutions at sufficiently high pH. Published in 2001 for SCI by John Wiley & Sons, Ltd.  相似文献

玉米蛋白水溶性差一直是阻碍水解度提高的瓶颈 ,采用不同方式对玉米蛋白的变性进行了研究 ,以期摸索出提高酶解玉米蛋白水解度的途径。实验表明 ,采用“变性剂A”对玉米蛋白进行预处理后 ,能显著地提高玉米蛋白在时间和水解度上的酶解水平 ,使得AlcalaseAF -2 .4L酶解玉米蛋白的水解度经过 1h酶解可达 30 %以上。  相似文献

平均体重 5 0 .9kg生长猪 ,采用全收粪法 ,6× 6拉丁方试验设计 ,测定不同种类的玉米蛋白粉日粮纤维和能量对生长猪氮代谢的影响。试验结果 :玉米蛋白粉 (CP :5 2 % )、玉米蛋白粉 (CP :47.4% )、玉米蛋白粉 (CP :32 % ) 3种日粮 ,氮的消化率分别为 87.9% ,88.9% ,89.7% ;总氮利用率分别为 5 2 .6 4% ,49.0 2 % ,37.86 % ;粪氮与日粮氮比值分别为 12 .0 % ,11.1% ,10 .5 %。玉米蛋白粉日粮的氮沉积量、氮消化率、总氮利用率与日粮的NDF ,ADF ,CF的消化率呈线性正相关。日粮的粪氮与日粮氮比值 ,同日粮的NDF ,ADF ,CF的消化率呈线性负相关 ,同日粮的NDF或CF含量呈线性正相关  相似文献

Fifty calves were fed a basal diet of 11.6% crude protein or one of four diets (15.5% crude protein) containing added soybean meal, corn gluten meal, cottonseed meal, or fish meal. Diets were calculated 75% total digestible nutrients. Body weight gain increased an average of 17% with added protein. Fish meal and soybean meal generated highest rates of gain. Ruminal ammonia-nitrogen was higher for soybean meal and cottonseed meal than other diets, indicating greater rates of degradability. Molar proportions of rumen volatile fatty acids were not different among diets, but concentration was lower for fish meal. Serum urea nitrogen was lowest for the basal and fish meal diets. Microbial nitrogen in the abomasum was 33.6% of total nitrogen for corn gluten meal and 42.8% for soybean meal. Apparent dry matter and nitrogen digestibilities were greater for corn gluten meal and fish meal diets than for soybean meal or cottonseed meal diets. Rumen degradability of feedstuffs, as determined by dacron bag technique, ranged from 38.1% for corn gluten meal to 71.3% for soybean meal. Degradability of mixed diets reflected those of the protein supplement present in each diet except for diet containing cottonseed meal. Fish meal and soybean meal were better protein sources for growth of ruminating calves than were corn gluten meal or cottonseed meal.  相似文献
