为丰富椰果加工品的市场,研究了两种新型椰果加工品——高纤椰果-苹果复合果酱和高纤椰果山楂糕的最佳配方和加工工艺。试验结果表明,高纤椰果-苹果复合果酱的最优配方为m(椰果)︰m(苹果浆)=1︰15、白砂糖15%、黄原胶0.1%和柠檬酸0.3%。在该条件下研制的高纤椰果-苹果果酱可溶性固形物低于35%,酸甜可口,既有椰果的咀嚼感,又达到了低糖果酱的目的。通过琼脂添加量的单因素试验得出,添加1%的琼脂制作的高纤椰果山楂糕组织形态最优;通过正交试验确定高纤椰果山楂糕的最佳配方为山楂浆50%、椰果20%、白砂糖20%和浓缩时间8 min。在最佳试验条件下研制的高纤椰果山楂糕可溶性固形物约40%,酸甜适口,有椰果的咀嚼感。 相似文献

为了提高果粒酸奶的品质,采用单因素实验和正交设计方法对果粒的色泽、果粒添加量以及含果粒甜玉米酸奶稳定性进行研究。实验结果表明,以0.2%CA+0.2%VC+0.2%CaCl2组成的复合护色剂对荔枝果肉褐变具有较强的抑制作用;果粒(荔枝果肉与椰果质量比为1:1)添加量8%时,产品感官品质最好;0.1%果胶+0.15%明胶+0.4%羟丙基二淀粉磷酸酯+0.2%羧甲基纤维素,添加到果粒酸奶中,产品具有良好的稳定性、悬浮性及较好的流动性,入口爽滑不粘不糊。 相似文献

本文研究了四种不同碳源(葡萄糖,果糖,甘露醇和乙醇)对两株木糖驹形氏杆菌(ATCC 53582和ATCC 23767)生产的椰果凝胶产量的影响,并研究了在相同碳源浓度下,由不同碳源生产的椰果凝胶的结构和力学性能。当碳源为葡萄糖且浓度为20 g/L时,木糖驹形氏杆菌ATCC 53582的椰果凝胶产量最高(6.07 g/L)。碳源浓度为30 g/L时,葡萄糖、果糖和甘露醇分别作为碳源生产的椰果凝胶的平均纤维网孔直径(分别为0.61μm、0.48μm和0.57μm)均小于乙醇为碳源生产的椰果凝胶(1.06μm);在相同椰果凝胶高度(0.50 mm)下它们的储能模量(分别为210 kPa、230 kPa和170 kPa)均大于碳源为乙醇生产的椰果凝胶(17 kPa);拉伸测试中,它们的杨氏模量(分别为3.54 MPa、6.49 MPa和5.49 MPa)也均大于碳源为乙醇生产的椰果凝胶(1.62 MPa)。 相似文献

明清时期受海上丝绸之路的带动,广绣成为最主要的出口手工艺术品之一,在艺术表现中明显吸收了西方艺术风格。文章通过对外销广绣商品实物、图片和国内外文献等多元化方式进行调研,结果表明:因海外贸易市场的驱动及多元化的消费需求,广绣外销织物呈现观赏型、定制型及批量型三种品类,且它们在对西方艺术的借鉴方式及程度上表现不一致,在艺术形式及制作方式上都呈现出了各自的特点。外销观赏型通过西方透视构图、色彩光影明暗烘托、水路技艺等艺术手段强调整体画面的立体空间感;外销定制型通过图案的题材和造型等艺术形式突出图案构造的创新;外销批量型则通过就简的工艺、艺人的分工合作等方面突出制作的程式化特点。虽然它们呈现的艺术特色有所区别,但都体现了明清时期商品经济以市场需求为导向的商品特征。 相似文献

Color characteristics and the influence factors of folk embroidered shoes in modern Jiangnan北大核心CSCD
Embroidered shoes have a long history. They were popular in the Ming and Qing Dynasties and are still popular in the Republic of China. They are traditional folk clothing accessories in Jiangnan area. The folk embroidered shoes in modern Jiangnan have great regional characteristics in shape technology and color and are rich in profound cultural connotation. They are handicrafts that perfectly combine traditional costumes and embroidery technology reflecting the unique charm of the costumes in the water town of Jiangnan. At present the researches on embroidered shoes in Jiangnan area are mainly analyzed from the perspective of manufacturing technology artistic characteristics and cultural connotation and rarely expounds its aesthetic characteristics and influencing factors from the perspective of color. Therefore the research on the color of modern Jiangnan folk embroidered shoes can restore the beauty of regional culture and help to carry forward and inherit Chinese traditional clothing culture. This paper made physical color measurement quantitative and qualitative statistics on the color of modern Jiangnan folk embroidered shoes which were collected in the Folk Costume Museum of Jiangnan University. It summarized the color characteristics of Jiangnan folk embroidered shoes analyzed the color aesthetics from three angles color layout color composition form and color implementation technology and explored the influence factors of the color formation of modern Jiangnan folk embroidered shoes from four aspects natural environment history and culture ideological belief and living customs. The research shows that the color of folk embroidered shoes in modern Jiangnan has obvious regional characteristics. Most of the main colors are simple and elegant mostly black navy blue and blue and decorated with red blue yellow and green with high saturation and high brightness. They form a color combination of "great unity and small contrast". The overall patterns of embroidered shoes are full of rhythm which can reflect the interest of the material and spiritual life of the Han nationality and contain profound cultural connotation. Its exquisite embroidery technology also enhanced the visual impact of embroidered shoes and the aesthetic value of patterns. Modern Jiangnan folk embroidered shoes have harmonious color proportion unique form and exquisite implementation technology. The local regional environment has a certain impact on the color composition of embroidered shoes. The humid and rainy climate the realistic and pragmatic Wu cultural concept the fresh and inaction color concept and the living customs of rice farming create the simple and elegant color image of Jiangnan folk costumes and highlight the gentle and beautiful image of Jiangnan women. This paper payed attention to the combination of empirical research and mathematical statistics excavated the influence of regional environment on the color of folk embroidered shoes in modern Jiangnan integrated art science and geography to explore the regional characteristics of costume color. In the future research we can further explore the age and occupation of the people wearing embroidered shoes in Jiangnan so as to make the research content more perfect. © 2022 China Silk Association. 为对明代中后期女袄的形制与结构作进一步解读,以出土和传世的明代中后期女袄作为实物来源,结合墓葬简报与地方志等书籍资料进行分析研究,发现其形制与结构上的变化主要体现在领部、袖部、大身3 个部位。通过对女袄领形、袖形、大身所具有的结构特征与变化的梳理,根据当时的社会状态和审美特征,总结了明代中后期女袄的形制特点与结构变化。揭示了其各部位的形制与结构变化规律:领子高度逐渐降低,领开口逐渐增大,衣袖部位袖底边曲度增加,大身部分尺寸愈加宽广,阐明了明代中后期女袄款式变化多样、继承与创新并存的特点,丰富了明代服饰文化研究成果。 相似文献

为揭示通风服对人体热舒适影响的机制,阐明通风服与人体之间的热湿传递关系,在介绍通风服的起源和工作原理的基础上,通过对国内外相关研究成果的分析和总结,重点论述了通风服热舒适性的研究方法:出汗暖体假人测试法、人体着装实验法和数值模型构建法,并分析了各种方法的优缺点。结果表明,通风服对人体热舒适的影响机制是一门集环境传热学、人体生理传热学、服装面料学以及流体力学交叉结合的工程问题。最后对通风服热舒适性研究进行了展望,认为未来将在通风服衣下气流的精确测量与仿真,衣下气流和热流数值模型的构建以及通风引起的局部和整体热舒适不匀等方面开展研究。 相似文献

A qualitative exposure assessment for Salmonella in eggs produced on the island of Ireland was developed. The assessment was divided into three main modules (production and packing, distribution and storage, and preparation and consumption), and each of these stages into defined steps in the exposure pathway. In the production and packing stage the initial prevalences of Salmonella in the contents and on the shell of eggs were estimated to be negligible and low respectively. Numbers of Salmonella both in and on eggs were estimated to be low. At each subsequent step in the pathway, qualitative assessments were made of the impact of events on the probability and level of Salmonella contamination on the shells and in the contents of eggs. At the end of each module assessments were combined to give an overall probability and level of Salmonella contamination. In the first two modules the assessment focused on the effect of the duration and temperature of storage on yolk membrane integrity and the likelihood of shell penetration. During the final stage the influence of factors such as safe-handling procedures, pooling practices, consumption patterns and the effectiveness of cooking, on the prevalence and level of Salmonella contamination in a food item at time of consumption was assessed. The outcome of this assessment was an estimate of a low probability and level of Salmonella contamination of egg-containing foods, prepared with eggs produced on the island of Ireland. 相似文献

运用F4发酵流变仪、质构仪等研究冻藏和冻融循环下抗冻蛋白对预醒发冷冻面团发酵流变学特性和馒头品质的影响。结果表明:随着冻藏时间的延长和冻融循环次数的增加,冷冻面团馒头的比容减小,硬度和咀嚼性明显增大,弹性和回复性下降。冷冻面团的最大发酵高度、气体总释放量和气体释放最大高度均明显下降。说明冻藏和冻融循环严重影响了酵母的产气能力和面团的持气性,与冻藏和冻融循环过程中重结晶和大冰晶的形成有关。添加抗冻蛋白的冷冻面团馒头品质得到明显改善,说明抗冻蛋白能够减缓冷冻面团馒头冻藏和冻融循环过程中品质下降。 相似文献

为提高天然染料染色织物的功能性并实现同浴染整,文章采用水溶性、反应性抗紫外剂改性的紫草素和未改性紫草素对蚕丝织物进行染色,研究了染浴pH值对织物染色性能及抗紫外性能的影响,探究了部分织物的抗菌性能。结果表明,紫草素及改性紫草素染色织物的色深值和颜色特征值受染浴pH值影响,染色织物均呈现一系列由紫红色至蓝紫色色光。当染浴pH值为9.0时,改性前、后紫草素染色织物的K/S值均较高,改性紫草素染色织物的耐皂洗色牢度和耐摩擦色牢度不低于改性前,抗紫外性能和抗菌性能均高于改性前。 相似文献
