Peanut α‐galactosidase was immobilised in calcium alginate beads and used to hydrolyse the flatulence‐causing oligosaccharides, raffinose and stachyose, in soya milk in batch and in packed bed reactor with recycle. The immobilised enzyme exhibited a slightly lower activity than the free enzyme. The activity yield of immobilised α‐galactosidase was 75.1% and the immobilisation yield was 82.6%. Batch hydrolysis using immobilised enzyme at 55 °C resulted in 96% reduction in the oligosaccharides after 12 h. For the continuous process, a packed bed reactor with recycle was used. More than 98% of the oligosaccharides were hydrolysed after 6 h of reaction at 55 °C. The immobilised enzyme also proved to be stable up to three repeated hydrolysis reactions. 相似文献

用超滤法和吸附法对地黄水苏糖提取液进行了初步分离和脱色。考察了微滤预处理、操作压力、温度及体积浓缩比对膜通量的影响,确定的最佳超滤工艺为:压力0.10 MPa,温度50℃,体积浓缩比8。应用该工艺可使w(水苏糖)由28.3%提高到40.5%,对溶液的脱色率达72.4%。将超滤透过液分别用活性炭、A l2O3和5种离子交换树脂进一步脱色,活性炭的脱色效果最佳,进而考察了活性炭用量、温度、脱色时间及pH对脱色率的影响。确定的最佳脱色条件为:温度50℃,活性炭0.3 g/L,脱色时间2.5 h,pH 4.0。在该条件下,脱色率可达99.1%。 相似文献

大豆低聚糖是豆科种子中可溶性寡糖的总称,近年来由于其中水苏糖和棉籽糖具有显著的抗肿瘤、改善胃肠道环境、调节血脂等功能而备受广大研究人员青睐。一直以来,人们都认为豆类会产生胀气,另一方面,豆类会产生益生元效应并改变大肠茵群,反过来作用于胃肠道系统,同时,近年来很多实验也证明饮食中的豆类摄取不会引起胀气。至今为止也没有学者研究得出豆类的耐受水平。对水苏糖和棉籽糖的深入研究不仅能为研制和开发新型功能性大豆制品提供理论基础,还能正确引导人们进行合理的日常饮食。本文主要综述了豆类中水苏糖和棉籽糖的理化性质和生理功能,特别是近些年其与胀气反应关系的最新研究进展。 相似文献

Pinto bean and fiend pea flours were inoculated with different populations of Lactobacillus fermentum or Lactobacillus plantarum, adjusted with water to 20% moisture and incubated. Amount of stachyose and number of lactobacilli were determined after 24, 48 and 72 hr. After 72 hr incubation stachyose was reduced in ointo bean (bv 27%) and field pea (43%) flours. Duration of incubation was the only factor which influenced stachyose reduction. Amount of inoculum and type of bacteria were of minor importance. Reduction of Flatulence-Causing Sugars by High Temperature Extrusion of Pinto Bean High Starch Fractions 总被引:1,自引:0,他引:1
Pinto bean high starch fractions were extruded using a Wenger TX-52 twin screw extruder. The effect of process temperature and moisture in the barrel on flatulence-causing sugars was investigated. Levels of flatulence causing sugar were lower in extruded compared to non-extruded samples with higher reduction at higher process temperature. Sugar content decreased from 5.29% in nonextruded samples to 3.69% in samples extruded at 163°C. Moisture content in the extruder barrel did not significantly affect sugars in the samples. Raffinose and stachyose contents were reduced 47 to 60% by extrusion. 相似文献

建立高效液相色谱法分离、蒸发光散射检测器(HPLC-ELSD)测定酸羊奶中水苏糖含量的方法.采用Hypersil NH2(250mm×4.6mm,5μm)色谱柱;流动相为甲醇∶水(83∶17),流速1mL/min,柱温为室温;蒸发光散射检测器(ELSD)参数,漂移管温度85℃,氮气压力35Psi,增益10.结果表明,在上述条件下测得水苏糖在2.504~12.52μg范围内线性关系良好,相关系数为0.999 8.本方法操作简便、稳定,结果准确、灵敏度高、重现性好. 相似文献
