以牦牛乳为原料,在相同发酵条件下对凝固型普通酸奶和牦牛乳酸奶发酵特性进行了对比分析。结果表明,牦牛乳酸奶的p H值在发酵初期低于普通酸奶,而在整个发酵期内牦牛乳酸奶p H值下降幅度小于普通酸奶,但达到发酵终点时,最终p H值趋向于4.6;总糖度从原料乳至酸奶发酵终点均高于普通酸奶,在到达发酵终点时糖度都保持在4%左右;在整个发酵期内普通酸奶酸度的增高幅度要大于牦牛乳酸奶;牦牛乳酸奶的发酵时间为11 h,而普通酸奶发酵时间为6 h;发酵期2种酸奶活菌数变化趋势基本相同,随发酵时间的延长活菌数逐渐增多而后又降低,02 h普通酸奶低于牦牛乳酸奶,经4℃贮藏24 h后普通酸奶的活菌数降低而牦牛乳酸奶活菌数增多;牦牛乳酸奶的黏度要高于普通酸奶的黏度。 相似文献

分析了甜荞苗的营养成份,结果表明,荞麦苗含有丰富的营养成份,特别是富含黄酮类化合物,是一种营养保健食品的新资源。对荞麦苗的取汁工艺及荞麦汁发酵进行了初步研究,荞麦汁发酵乳中维生素含量高于普通酸奶,含有酸奶缺乏的黄酮类化合物。 相似文献

以鲜奶和南瓜为主要原料,以保加利亚乳杆菌为发酵菌种,对南瓜发酵酸奶的工艺进行了研究。通过正交实验确定出发酵工艺的各个工艺参数和酸奶的最佳配方,制成一种营养丰富、风味独特并具有保健功效的南瓜酸奶。实验结果表明,该酸奶最佳配方为南瓜浆10%,蔗糖量8%,乳酸菌接种量3%,稳定剂用量0.2%。最佳复合稳定剂为卡拉胶∶海藻酸钠∶CMC-Na=1∶1∶2,发酵温度42℃,发酵时间4.5h。 相似文献

High-protein yoghurt has gained increased consumer interest over the recent years, partly driven by improvements in taste and texture; there is also greater scientific evidence on dairy protein health benefits. The protein content of yoghurt can be increased prior to fermentation by addition of dairy powder, evaporation or membrane filtration, or after fermentation by straining, mechanical separation, or membrane filtration. Concentration of yoghurt after fermentation produces large volumes of acid whey, a major concern for the dairy industry; by concentrating prior to fermentation, production of acid whey is avoided. Different processing techniques influence yoghurt composition, structure, rheology, and sensory properties. This review discusses the challenges, opportunities, the influence of macro components in milk and different processing techniques on composition, structure, rheology, and sensory properties of high-protein yoghurt, along with their benefits and drawbacks for the dairy producer. 相似文献

The antioxidant activity of several dairy products, yoghurt enriched with green tea and lemon, fermented milk, yoghurt with strawberry pulp, 'low-calorie' yoghurt with inulin and milk enriched with vitamin E and their ingredients were analysed. Yoghurt enriched with green tea and lemon showed the best lipidic antioxidant capacity. All the dairy products analysed were very good OH· radical scavengers. The dairy products analysed were unable to scavenge H2 O2 except green tea. The antioxidant activity of these samples resisted high temperatures in the Rancimat test; of the ingredients analysed, the best antioxidant activity was found for vitamin E followed by green tea, pectin, Lactobacillus acidophilus , lemon pulp and cornstarch. Antioxidant activity did not suffer variations during storage at an unfavourable temperature (40 °C), as demonstrated by the linoleic acid assay. Yoghurt enriched with green tea and lemon, yoghurt with strawberry pulp and low-calorie yoghurt with inulin produced the best results in the Trolox equivalent antioxidant capacity (TEAC) assay. 相似文献

乳液凝胶是一种新型的脂肪替代物,乳清蛋白和黄油是乳品中常用的原、辅料,利用乳清蛋白和黄油制作的乳液凝胶在乳制品加工中具有良好的应用前景。制备不同蛋白和脂肪含量的乳清蛋白-黄油乳液凝胶颗粒(whey protein-butter emulsion gel particles,WPI-EG),研究其对低脂酸奶理化特性及感官品质的影响,通过分析酸奶的持水力、质构、流变、微观结构及感官评价等指标,评价WPI-EG在低脂酸奶中的作用。结果表明,WPI-EG(5.5%蛋白质,7.9%脂肪)改善了酸奶的质构特性,硬度、稠度、黏聚性及胶着度显著增加,持水力增强。添加WPI-EG的实验组低脂酸奶的表观黏度显著高于对照组低脂酸奶。电镜结果显示,随着添加的WPI-EG中蛋白质和脂肪质量分数的增加,酸奶网络结构更加紧密。5.5%PR感官评价得分较高,具有较好的香气、润滑感和组织状态(酸奶中的WPI-EG添加量为10.9%)。研究显示,特定蛋白和脂肪含量的WPI-EG在酸奶中能够作为脂肪替代物和稳定剂,显著提升低脂酸奶的品质。 相似文献

文章比较全面归纳总结了水果酸乳的兴起与发展、发酵剂、生产工艺及关键点以及水果酸乳研究与生产中所存在的问题,期望为水果酸乳的深入研究及实际生产提供参考与借鉴。水果酸乳在酸乳的基础上融合了水果和酸乳的风味、营养和功能成分,实现了乳业和水果业的链接。水果酸乳发酵过程中,乳酸菌迅速生长繁殖形成的酸性环境能有效抑制杂菌的生长,从而保证了酸乳的安全性。虽然水果酸乳的生产中依然存在发酵剂、噬菌体、褐变、多酚蛋白质相互作用、凝乳稳定性、后酸化等诸多难题,但随着酸乳发酵工艺的改善和酸乳发酵剂的不断创新,许多不同类型的水果酸乳得到了市场的认可。然而水果酸乳的花色品种仍然较少,不能满足市场需求,生产中还有许多难题尚待解决,有必要进行更深入的研究。 相似文献

A total of 32 indigenous lactic acid bacteria (LAB) isolates were previously obtained from 7 samples of traditional dairy products in specific ecological niches throughout the northwestern area of China. Among the 32 isolates, 9 strains of LAB were selected for their potential in fermented dairy products and identified by 16S rDNA sequence analysis. In this study, these 9 isolates were combined each other and 8 combinations were selected according to their fermentation characteristics in yoghurt production. The effects of these 8 combinations on acidification, post acidification, texture and sensory quality of yoghurt were analysed. Results indicated that Streptococcus thermophilus SP1.1 combined with Lactobacillus delbrueckii ssp. bulgaricus 3 4.5 was the best combination and better than the commercial starter culture in terms of yoghurt fermentation time and sensory quality, suggesting that the combination has potential as a commercial starter to improve the quality of yoghurt. 相似文献
