对静态及RBD反应器培养得到的细菌纤维素的持水性、纯度、结晶度及纤维丝结构进行测试,分析了2种不同培养方式下得到的细菌纤维素的性质与结构的差异。结果表明,RBD反应器培养的细菌纤维素较静态培养的细菌纤维素具有更高的持水性和纯度;静态培养所得纤维素的结晶度比RBD反应器培养的结晶度大,纤维丝带也更致密、纤细。  相似文献

分别以静置和振荡培养方式培养木醋杆菌,对静置培养及振荡培养得到的细菌纤维素的纤维丝结构、红外光图谱、持水性、复水性以及灰分含量进行了测试,分析了在静置培养和振荡培养下得到的细菌纤维素的性质和结构差异。结果表明,静置培养所产纤维素成一薄膜,纤维结构较纤细、致密,振荡培养所产纤维素成球状,两者结构有明显差异;两者的红外光图谱基本一致;振荡培养得到的细菌纤维素的吸水性和复水性均比较好,而静置培养得到的细菌纤维素灰分含量较低。  相似文献

在驹形杆菌发酵过程中,通过加入二硫苏糖醇、氯霉素、吐温-80、乳化剂OP-10、石英砂和纳米二氧化硅等干扰因子对其发酵过程进行结构调控,考察产物微观形态的变化。结果表明,干扰因子可以明显改变细菌纤维素的网络结构,但是却没有对细菌纤维素的晶型产生明显的影响。在持水性方面,吐温-80可以将细菌纤维素含水量从原有的90倍提高至105倍自身质量,二硫苏糖醇和OP-10会稍微降低细菌纤维素的含水量,氯霉素和纳米二氧化硅会将持水能力降至70倍自身质量。  相似文献

探讨了培养基配比、填充料、溶氧对发酵生产细菌纤维素的影响,并分析了发酵过程中总糖、总酸的变化,最终确定淋浇发酵法生产细菌纤维素的工艺条件:以3∶5(v/v)的糖酒混合液作为基础培养基,将7.5kg(湿重)玉米芯自然堆放,5kg(湿重)谷壳于玉米芯底部和上部分两层平铺作为填充料,每4h淋浇1次,每次淋浇1min,发酵144h终止,最终产量可达到4.792g/L,与静态发酵相比增加了79.68%。  相似文献

以正交实验设计方法,对木醋杆菌Acetobacter xylinum发酵产细菌纤维素的工艺进行了优化.采用正交设计助手,对发酵产细菌纤维素的初始pH、摇瓶装液量、碳源中果糖与葡萄糖的比例和氮源酵母粉的添加量等影响因素进行正交实验设计,以细菌纤维素产量为目标,在实验范围内得到各因素影响次序为摇颓装液量>氮源>碳源>初始pH,得到最优发酵工艺为:初始pH 6.0,摇瓶装液量50 mL/250mL摇瓶,果糖与葡萄糖质量比例为l:1,酵母粉14g/L.优化后细菌纤维素产量达到13.493g/L.  相似文献

细菌纤维素是木醋杆菌经液态基质发酵而形成的细胞外纤维素,具有很强的亲水性、持水性、凝胶特性。将其添加到新鲜牛奶中进行乳酸茵发酵,采用正交实验设计确定乳酸菌的最佳发酵条件,研制出细菌纤维素酸奶。该细菌纤维素酸奶与普通酸奶相比,其口感和凝固状态均有很大改善。  相似文献

本文在已筛选出在摇瓶培养条件下高产细菌纤维素菌株--醋杆菌C2的基础上,研究了不同发酵条件对该菌株产纤维素的影响。实验结果表明,醋杆菌C2 发酵产生细菌纤维素的最适温度为27℃,最适pH为4.5,装液量50ml/250ml三角瓶,转速为160r/min,发酵终点204h。  相似文献

以木葡糖酸醋杆菌Gyll为目标菌株,采用单因素法对液体发酵生产细菌纤维素的发酵条件(氮源、碳源、初始pH值、种龄、接种量和静态发酵周期)进行了优化,并对其代谢生产的细菌纤维素的微观结构进行了观察。结果表明,最优发酵条件为蔗糖5%,玉米浆干粉5%;初始培养基pH 6.2,发酵液中接种量10%;采用动静三步结合发酵时,一级种子的种龄24h,二级种子扩大化培养时种龄为20h,静态培养周期为8d。菌株最高产量为11.49g/L,约是优化前的5倍。通过红外光谱(FT-IR)、扫描电镜(SEM)、X射线衍射对细菌纤维素的表征,确定制得的细菌纤维素属于Ⅰ型纤维素,具有典型的网状结构,纤维束尺寸为纳米级且结晶度很高。  相似文献

A 9% whey protein (WP) isolate solution at pH 7.0 was heat-denatured at 80°C for 30 min. Size-exclusion HPLC showed that native WP formed soluble aggregates after heat-treatment. Additions of CaCl2 (10–40 mM), NaCl (50–400 mM) or glucono-delta-lactone (GDL, 0.4–2.0%, w/v) or hydrolysis by a protease from Bacillus licheniformis caused gelation of the denatured solution at 45°C. Textural parameters, hardness, adhesiveness, and cohesiveness of the gels so formed changed markedly with concentration of added salts or pH by added GDL. Maximum gel hardness occurred at 200 mM NaCl or pH 4.7. Increasing CaCl2 concentration continuously increased gel hardness. Generally, GDL-induced gels were harder than salt-induced gels, and much harder than the protease-induced gel.  相似文献

The levels of bisphenol-F-diglycidyl ether (BFDGE) were quantified as part of a European survey on the migration of residues of epoxy resins into oil from canned fish. The contents of BFDGE in cans, lids and fish collected from all 15 Member States of the European Union and Switzerland were analysed in 382 samples. Cans and lids were separately extracted with acetonitrile. The extraction from fish was carried out with hexane followed by re-extraction with acetonitrile. The analysis was performed by reverse phase HPL C with fluorescence detection. BFDGE could be detected in 12% of the fish, 24% of the cans and 18% of the lids. Only 3% of the fish contained BFDGE in concentrations considerably above 1mg/kg. In addition to the presented data, a comparison was made with the levels of BADGE (bisphenol-A-diglycidyl ether)analysed in the same products in the context of a previous study.  相似文献

Microgels are ‘soft’ microscopic cross-linked polymeric particles that are being increasingly exploited in a variety of industries for rheology control, encapsulation and targeted delivery. They are valued because of the ability to tune their functionality to address specific applications in oil recovery, coatings, drug delivery, cosmetics, personal care and foods. Food microgels are typically biopolymer hydrogels in the form of microspheres, nanospheres (also called nanogels), spheroids and fibres. The utilisation of engineered microgels in foods has so far been limited, despite their great potential to address several needs in the food industry, including: satiety control, encapsulation of phytonutrients and prebiotics, texture control for healthier food formulations (e.g. reduced fat products), and targeting delivery to specific areas in the digestive tract. We review the scientific and patent literature on the utilisation and manufacturing methods for producing microgels with an emphasis on micro-hydrogels for food applications.  相似文献

Joubert and Burns prepared a large number of fractions from the high-sulphur proteins of wool and estimated their molecular weights and amino-acid compositions. Their data have been re-examined in order to look for statistically significant interrelations between amino acids and between the proportion of various amino acids and molecular weight. Statistical analysis of the data is also used to examine the credibility of some hypotheses concerning the mechanism of keratin biosynthesis and to provide further evidence for the existence of families of proteins within the high-sulphur fractions of wool.  相似文献

The European Commission's, Quality of Life Research Programme, Key Action 1—Health, Food & Nutrition is mission-oriented and aims, amongst other things, at providing a healthy, safe and high-quality food supply leading to reinforced consumer confidence in the safety of European food. Its objectives also include the enhancing of the competitiveness of the European food supply. Key Action 1 is currently supporting a number of different types of European collaborative projects in the area of risk analysis. The objectives of these projects range from the development and validation of prevention strategies including the reduction of consumers risks; development and validation of new modelling approaches; harmonization of risk assessment principles, methodologies, and terminology; standardization of methods and systems used for the safety evaluation of transgenic food; providing of tools for the evaluation of human viral contamination of shellfish and quality control; new methodologies for assessing the potential of unintended effects of genetically modified (genetically modified) foods; development of a risk assessment model for Cryptosporidium parvum related to the food and water industries; to the development of a communication platform for genetically modified organism, producers, retailers, regulatory authorities and consumer groups to improve safety assessment procedures, risk management strategies and risk communication; development and validation of new methods for safety testing of transgenic food; evaluation of the safety and efficacy of iron supplementation in pregnant women; evaluation of the potential cancer-preventing activity of pro- and pre-biotic ('synbiotic') combinations in human volunteers.
