In this study, ultrafiltered (UF) Iranian white cheese made with adjunct cultures including six Lactobacillus isolates (Lactobacillus brevis, L. casei and L. plantarum) from traditional Iranian Motal cheese. The peptide extract (<5 kDa) of cheese samples were assessed for angiotensin-converting enzyme (ACE)-inhibitory activity during ripening (5 °C). Among the strains used, L. brevis KX572382 (M8) was selected because of the greater increase in (ACE)-inhibitory activity in the cheese (P < 0.05). The highest activity of M8 extract was observed on the 28th (71.72%) day of ripening (P < 0.05). Proteolytic activity assessment and RP-HPLC peptide profile of M8 water-soluble extracts (WSEs) indicated the effect of M8 on further protein degradation due to secondary proteolysis. A total of 7 different peptide sequences, previously known in the literature for their ACE-inhibitory activity, were tentatively identified by LC/ESI-MS in 28-day M8 peptide extract. Although the effect of M8 on pH and the proteolysis development in cheese was significant, no adverse effect was observed on the sensory properties. In conclusion, M8 strain can enhance the functional properties of Iranian UF white cheese.  相似文献

This paper develops a relative output‐feedback–based solution to the containment control of linear heterogeneous multiagent systems. A distributed optimal control protocol is presented for the followers to not only assure that their outputs fall into the convex hull of the leaders' output but also optimizes their transient performance. The proposed optimal solution is composed of a feedback part, depending of the followers' state, and a feed‐forward part, depending on the convex hull of the leaders' state. To comply with most real‐world applications, the feedback and feed‐forward states are assumed to be unavailable and are estimated using two distributed observers. That is, a distributed observer is designed to measure each agent's states using only its relative output measurements and the information that it receives by its neighbors. Another adaptive distributed observer is designed, which uses exchange of information between followers over a communication network to estimate the convex hull of the leaders' state. The proposed observer relaxes the restrictive requirement of having access to the complete knowledge of the leaders' dynamics by all the followers. An off‐policy reinforcement learning algorithm on an actor‐critic structure is next developed to solve the optimal containment control problem online, using relative output measurements and without requiring the leaders' dynamics. Finally, the theoretical results are verified by numerical simulations.  相似文献

Computational Fluid Dynamics (CFD) was applied three-dimensionally to simulate the drying behavior of paddy in a deep-bed dryer. The commercial CFD software Fluent 6.3.26 was used. The deep-bed paddy drying process and performance were studied by incorporating user-defined function (UDF) in Fluent written in C language. The predicted drying parameters were compared with experimental data of deep-bed drying of paddy. The values of mean relative deviation (MRD), standard error of prediction (SEP), and maximum error of prediction (MEP) for prediction of grain moisture content, air temperature, and absolute humidity were less than 6, 10, and 9%; 0.33% (d.b), 1.24°C, and 0.06% (kg/kg of dry air); and 2.25% (d.b), 6.8°C, and 0.37% (kg/kg of dry air), respectively, which reflect reasonable accuracy. Moreover, the energetic and exergetic performance of deep-bed paddy drying were simulated and analyzed. The effects of inlet air temperature and mass flow rate on the performance parameters were investigated. It was shown that the application of higher levels of inlet air temperature and lower mass flow rates yielded higher exergy efficiencies of deep-bed paddy drying.  相似文献

In the present study, the effects of continuous and pulsed ultrasound (100 W, 30 kHz, 25–75% amplitudes for 30 min) and fermentation process (37°C for 24 h) by Lactobacillus helveticus PTCC 1332 on biological activities of Chortan were investigated. The obtained results showed that fermentation enhanced protease content (36.27% (neutral), 37.57% (acid), 39.28% (alkaline) protease), peptide concentration (45.27%) and antioxidant activity (33.69% (DPPH), 132.85% (ABTS)) of samples compared to unfermented ones. Additionally, an increase in ultrasound amplitude (except for continuous at 75%) promoted the protease enzymes, peptides and radical scavenging activity of the fermented and unfermented samples. Our results indicated that the ultrasound and fermentation treatments complemented each other. Depending on the experimental conditions, the effect of continuous ultrasound on samples was sometimes lower, sometimes similar and sometimes higher than that of pulsed treatment. Therefore, selection of an appropriate ultrasound mode and amplitude can improve the biological activity of Chortan.  相似文献

In the present research, the effects of continuous ultrasound treatment (100 W, 30 kHz; 0%, 30%, 60% and 90% amplitudes, 15 min) and fermentation process (37°C, 24 h) on the growth of Lactobacillus plantarum LP3 and LU5 strains and bioactive properties (peptide content, α-amylase and α-glucosidase inhibition, anticancer and antioxidant activities and exopolysaccharide content) of goat milk were investigated. According to our results, the ultrasonication of milk up to 60% amplitude promoted the growth of Lactobacillus strains and enhanced the bioactive properties compared with control during fermentation, while, the ultrasonication at 90% amplitude had negative effects on the mentioned parameters. Exopolysaccharide content, α-amylase inhibition, α-glucosidase inhibition, antioxidant activity and anticancer activity of treated samples at 60% amplitude at the end of fermentation in comparison to its beginning were increased 18.09, 12.79, 12.44, 9.4 and 1.92 folds, respectively. Also, the increase of assayed characteristics was found strain-dependent, so that L. plantarum LP3 was more effective than LU5 strain.  相似文献
