苦荞超微粉对苦荞小麦混合粉及其挂面品质的影响 总被引:1,自引:0,他引:1
将普通苦荞粉,苦荞超微粉A和B按照5%~30%的比例添加到小麦粉中,对苦荞小麦混合粉的面团粉质特性及其挂面的感官品质、蒸煮品质及质构特性进行了研究,结果表明:与普通粉相比,添加苦荞超微粉的混合粉面团的吸水率增加,面团形成时间和稳定时间缩短,弱化度值升高,粉质指数降低;添加苦荞超微粉提高了挂面的感官品质;添加量在15%以下时,添加苦荞普通粉制作的面条煮熟增重率较高,添加量在15%~30%时,添加苦荞超微粉A制作的面条煮熟增重率较高,而添加量在5%~30%时,添加苦荞超微粉A制作的面条煮熟的干物质损失率最低;苦荞粉超微处理增加了苦荞挂面的坚实度和剪切功,面条咀嚼性和韧性增强。小麦粉中添加20%苦荞超微粉A时制作的挂面韧性,口感良好。 相似文献

以华南9号木薯全粉替代小麦面粉为原料,辅以谷朊粉、黄原胶、乙酰化二淀粉磷酸酯等改良剂制备木薯全粉面条,通过单因素和正交实验优化木薯全粉面条配方,考察指标包括感官评价、断条率及蒸煮损失率。确定木薯全粉面条的最佳配方为:谷朊粉用量6%(g/100 g木薯全粉),黄原胶用量1.5%,乙酰化二淀粉磷酸酯用量9%,食盐用量1%,热水(95±2) ℃用量为56%(g/100 g总原料粉)。用最佳配方制作面条,氢氰酸未检出,食用安全;熟断条率为0%,蒸煮损失率为7.8%,均符合挂面行业标准(LS/T 3212-2014)指标要求,表明使用木薯全粉制作面条技术是可行的。 相似文献

evaluated in terms of cooking quality, color, chemical, and sensory properties. As oat flour level increased, protein, crude
fat, ash, Mn, Fe, Zn, and Mg contents of noodles increased. Oat flour caused increases in cooking loss of noodles. Sensory
and cooking characteristics of noodles were negatively effected when oat flour level was increased compared with the control.
Noodle with 10% oat flour received the highest sensory scores in all noodle samples containing oat flour. Overall acceptability
scores of control and in only the noodle with 10% oat flour were found statistically (p<0.05) similar. Especially, the usage of 10% oat flour in noodle formulation gave satisfactory results in terms of acceptability. 相似文献

为考察半干法磨粉过程中润米时间对大米粉粉质特性及鲜米粉质量的影响,本研究选用了不同润米时间条件下的大米原料进行半干法磨粉并制备鲜米粉。以可以实现半干法磨粉的24 h润米时间作为阳性对照,分析和比较不同润米时间的大米粉粒径分布、破损淀粉含量、糊化特性等粉质特性以及鲜米粉的蒸煮损失、感官评价等制品品质特性,以确定获得同样效果的最短润米时间。研究结果显示:润米6 h后进行半干法磨粉可以获得与24 h润米时间同样的大米粉粒度分布、破损淀粉含量、最高粘度和最低粘度等粘度特性。用此大米粉制备的鲜湿米粉产品,获得了理想的蒸煮损失率和可接受的感官评分值。以上结果表明,润米6 h是获得如润米24 h同样的大米粉及鲜湿米粉品质特征的理想润米时间。 相似文献

对小麦粉中的蛋白质和淀粉组分进行了分离,将淀粉含量不同的混合粉制作成面条,分析其质构特性和食用品质。将面条煮制后,对熟面条进行了质构分析,测定了熟面条的硬拉伸性能、剪切性能和蒸煮损失,并进行了感官品质评价。研究结果表明:随着小麦粉中的淀粉含量的增加(蛋白质含量的降低),面条的质构特性、拉伸性能、剪切性能都呈现显著下降的变化趋势(P<0.05),而面条的蒸煮损失显著增加(P<0.05)。此外,面条的感官评价与质构分析的结果相一致。 相似文献

以苦荞-小麦混合粉制作面条,研究了不同比例的苦荞粉和添加剂(明胶,海藻酸钠和CMC)对苦荞面条加工特性的影响,并采用正交试验优化了苦荞面条的加工工艺.结果表明,随着苦荞粉添加比例的增加,面条的断条率逐渐增大,烹调损失也逐渐增加,面条的品质随之变差;三种添加剂的使用均可改善面条的蒸煮品质,其中CMC的效果最好;当苦荞粉与小麦粉的比例为3:7时,按混合粉质量分别添加0.55%的CMC添加剂、35%的水及1%的食盐,经和面、熟化、压面、切条与干燥工艺,可制得品质较好的面条. 相似文献

酵母发酵空心挂面是一种新型的工业化挂面产品,具有营养丰富、风味独特等特点,但尚存在干挂面韧性差和易断条、熟面条弹性不足等问题亟待解决。该文研究了瓜尔豆胶、黄原胶、海藻酸钠、羧甲基纤维素钠、魔芋粉5种常用多糖对发酵空心挂面微观结构、力学性质、蒸煮特性、质构品质和感官品质的影响。结果表明:与对照相比,单独添加0.1%瓜尔胶、海藻酸钠、羧甲基纤维素钠和魔芋粉时,挂面的蒸煮损失率从6.5%分别降低到5.8%、5.7%、5.3%和5.9%;添加0.5%黄原胶时,干挂面的面体更加致密,面条的最佳蒸煮时间增长了1.25 min,蒸煮损失减少了0.41%,干挂面的抗断裂强度和柔韧性、熟挂面的弹性、咀嚼性和拉断力分别提高了31.06%、49.79%、24.87%、61.62%和77.73%,此添加量下的面条的食用品质最佳,感官评价得分89分。5种多糖均显著改善了发酵空心挂面的柔韧性,及煮后挂面的弹性、咀嚼性和拉伸特性,其中黄原胶对发酵空心挂面的微观结构、力学性质、蒸煮特性、质构品质和感官品质改良效果较好。 相似文献

通过在小麦粉中添加不同比例的蛋清粉,测定其糊化、粉质特性及挂面的蒸煮、质构特性和进行感官评价来探讨蛋清粉对小麦粉及挂面品质的影响。结果表明:随着蛋清粉添加量的增加,小麦粉的峰值黏度、低谷黏度、最终黏度和崩解值逐渐增大,峰值时间呈现下降趋势而糊化温度无明显变化。面团吸水率随蛋清粉添加量的增加而明显减少,面团形成时间不随添加量的增加而显著变化,但明显低于对照组,当蛋清粉添加量为3%时,面团稳定时间最长,弱化度最低。挂面的吸水指数、最佳蒸煮时间随蛋清粉添加量的增加而显著增大,但蒸煮损失在添加量为3%时最少。挂面的折断力、拉断力和硬度随蛋清粉添加量的增加而增大。综合挂面蒸煮、质构特性与感官评价结果得出,当蛋清粉添加量接近3%时挂面综合品质最好。 相似文献

Flaxseed flour was used as a functional ingredient in the production of beef patties. Beef patties were produced with five different formulations; the addition of 3%, 6%, 9%, 12% and 15% flaxseed flour. Control samples were formulated with 10% and 20% fat addition. Raw and cooked beef patties were analyzed for moisture, protein, fat, ash, pH, color parameters and fatty acid profiles. Beef patties were evaluated for cooking loss and sensory properties. Fat and ash content of raw patties increased, while moisture and protein content decreased with increased flaxseed flour. The same trend (except fat content) was also observed after cooking. The addition of flaxseed flour did not affect pH values of raw and cooked beef patties. The addition of flaxseed flour improved the cooking loss but, increased the energy value (as kcal/100 g). L and a values of raw beef patties containing flaxseed flour were close to controls with 10% fat. α-linolenic acid content of raw and cooked beef patties increased as the level of flaxseed flour increased. The PUFA/SFA ratio increased from 0.04 in the control with 10% fat to 0.62 in the raw beef patties with 15% flaxseed flour. The n-6/n-3 ratio decreased from 5.76 in the control with 10% fat to 0.36 in the raw beef patties with 15% flaxseed flour. The nutritional status of beef patties was enhanced with minimal composition and sensory changes with 3% or 6% flaxseed flour addition. 相似文献

将小米粉按照10%~80%的比例添加到小麦粉中,对小米小麦混合粉的粉质特性和糊化特性进行了分析,同时对由混合粉制作成的挂面的品质特性进行了分析研究。结果表明:1)随着小米粉添加量的增加,小米小麦混合粉的峰值黏度、最低黏度、最终黏度、回生值、衰减值和峰值时间都在降低,形成时间、稳定时间、粉质指数都是先降低再升高。2)挂面蒸煮损失率不断升高,干物质吸水率不断下降。小米添加量≤30%时,挂面品质比较好,添加量≤60%时,品质尚可,添加量60%时,挂面品质下降比较大。3)小米粉的添加量、小米小麦混合粉的RVA特性、粉质特性与混合粉挂面的蒸煮品质特性有非常高的相关性。 相似文献

糯小麦粉中支链淀粉含量很高,糊化特性和冻融稳定性好,在食品加工中应用比较广泛。本试验将糯小麦粉以0%、10%、20%和30%的比例添加到小麦粉中,研究了配粉对速冻水饺蒸煮特性、质构、冻裂率和感官特性的影响。结果表明:2种小麦粉混配后降低了饺皮的蒸煮时间和蒸煮损失率。随着糯小麦粉添加量的增加,速冻水饺冻裂率显著降低。糯小麦粉的添加使得生饺皮的强韧性增加,一定比例的添加有利于饺皮煮后TPA特性的改善。在速冻水饺的感官上,糯小麦粉的添加使得水饺在口感上有所提高,但在外观上得分较对照组低。随着冻融循环次数的增加,添加了糯小麦粉的速冻水饺品质比较稳定,能够较好地保持产品食用价值。最适添加量为20%。 相似文献

The aim of the present study was to investigate the effects of gelatinisation level, gum (locust bean gum, xanthan gum, 3%) and/or transglutaminase (TG, 0.5%) on quality characteristics of rice noodle. In order to improve the dough forming ability, rice flour was gelatinised at levels of 15%, 20%, 25% and 30%. Noodle samples were evaluated in terms of cooking loss, total organic matter (TOM), water absorption, swelling volume, maximum force, colour, sensory properties, pasting properties. Noodle sample with a gelatinisation level of 25% had better cooking and sensory properties. Gum and/or TG were added to this noodle formula. The noodle samples including xanthan gum had better cooking and sensory properties. TG caused a significant decrease in TOM. The samples including locust bean gum had significantly higher maximum force values. Xanthan gum caused decreases in some Rapid ViscoAnalyzer viscosity values of the noodle samples, while locust bean gum caused increases. 相似文献

Effect of heat-moisture treatment of germinated brown rice (GBR) on the texture and cooking quality of the noodles containing mixtures of wheat and GBR flours was investigated. With the increase in GBR content, hardness and tensile strength of the composite noodles decreased and cooking loss and water absorption increased. Pasting viscosity of the flour mixtures was significantly decreased by increasing the amount of GBR. Heat-moisture treatment of GBR (17 or 20 g/100 g moisture at 100 °C for 4 h), however, apparently increased the pasting viscosity and improved the texture and cooking quality of the composite noodles. The mixture of wheat and a treated GBR (1:1 weight ratio) showed a pasting viscosity similar to pure wheat flour. The noodle containing the heat-moisture treated GBR flours showed the lower cooking loss, and higher hardness and tensile strength than the noodle containing untreated counterparts. Among the treated GBR flours tested, the GBR treated at 100 °C for 4 h at a moisture level of 17 g/100 g was the most acceptable in terms of cooking quality and textural property, close to those of the noodle of pure wheat flour. Substitution with the heat-moisture treated GBR, however, made the noodle darker because of thermal discoloration of GBR. 相似文献

BACKGROUND: Flaxseed has many health benefits and is considered a functional food ingredient. Flaxseed flour (0–18%) was used to partially replace wheat flour in cookies and its effects on the physical and sensory characteristics of the cookies were investigated. A correlation analysis was conducted between the instrumental and sensory data. RESULTS: The cookie dough stickiness significantly (P < 0.05) decreased in relation to higher percentages of flaxseed flour. The 18% flaxseed cookies had the firmest texture, darkest color and lowest water activity. The 18% flaxseed cookies had the greatest spread ratio. However, this resulted in cookies of unacceptable quality properties. In consumer acceptance tests, cookies made with 6% and 12% flaxseed flour had the highest rating among all sensory attributes, while the 18% flaxseed cookies had the lowest sensory scores. The flavor attribute was most highly correlated with the overall acceptability (r = 0.90). CONCLUSION: Results indicated that flaxseed flour can be incorporated in cookies as a partial replacement up to 12% of wheat flour without negatively affecting the physical and sensory quality. The correlation results suggest that the flaxseed flavor attributes best predict consumer preference for overall acceptability, though texture and color attributes also contribute. 通过对不同类型小麦品种鲜湿面条的煮面时间及其与面粉品质的关系研究,结果表明:随着煮面时间的延长,面条评分呈先上升后下降的趋势,不同类型小麦品种的面条评分分别在不同煮制时间达到最大值;同时,随着煮制时间的延长,糯小麦面粉开始糊化温度逐渐下降,而黑小麦76、豫麦34、豫麦49、豫麦50呈先上升后下降的趋势,且均在一定时间后保持平缓的趋势。最佳煮面时间和面粉品质的相关分析表明,最佳煮面时间和直链淀粉含量、最终粘度、反弹值、糊化温度呈显著正相关,和稀懈值呈显著负相关;糊化特性能较好的预测最佳煮面时间。同时,评委感官评价测得的最佳煮面时间和糊化温度测定法有极显著相关性。 相似文献

ABSTRACT Potato and sweet potato starches and derivatives thereof were used to substitute part of the wheat flour in white salted noodle (WSN) manufacture. The quality of the WSN obtained was compared with the quality of WSN made from wheat flour only. When up to 20% of wheat flour was replaced by acetylated potato starch and acetylated sweet potato starches, the cooking loss of WSN decreased, while the softness, stretchability, and slipperiness increased significantly. Native and hydroxypropylated starches did not exhibit these effects. It can be concluded that the substitution of part of wheat flour with acetylated starches strongly affects noodle-making and final noodle quality, and starch substitution can be used to change the performance of a given wheat flour for noodle making in a desired way. 相似文献

优化高添加苦荞面条的配方并研究其抗氧化活性。采用单因素实验和响应面试验,以综合评分为考察指标,确定高添加苦荞面条的最优配方;测定面团的热机械特性和面条蒸煮特性及其抗氧化活性。结果表明,高添加苦荞面条的最佳配方是:苦荞添加量62%、面粉添加量38%、蔗糖酯添加量0.4%、食用碱添加量0.2%、魔芋胶添加量0.4%、食盐添加量2%。改良组的面团蒸煮稳定性(C4/C3)优于纯小麦面条组,采用该配方制备的高添加苦荞面条(即改良组)综合评分最高。总酚含量及体外抗氧化活性结果显示,改良组面条的总酚含量及抗氧化能力显著高于纯小麦面条(P<0.05),其中,改良组的总酚含量为9.11 mg GAE/g,DPPH·清除率为70.55%,ABTS+·清除率为87.73%;而纯小麦面条的总酚含量及DPPH·、ABTS+·清除率分别为1.11 mg GAE/g、36.70%、9.10%。通过蒸煮特性结果可以得出,无改良剂的苦荞面条其蒸煮损失率、断条率及面汤浑浊度显著大于纯小麦面条(P<0.05),而改良组的蒸煮损失率、断条率与纯小麦面条差异不显著(P>0.05),但面汤浑浊度差异显著。因此,本文优化后的高添加苦荞混合粉具有较高抗氧化活性及面条加工适性。 相似文献
